If you’ve never tried a beer cheese dip, you’re missing it! The goodness of the warm, melted cheese with a light, delicious “beer” (can be made more “hoppy” with a variety of beer varieties) and a Little Cayenne Kick. Served with warm dough bowls, tortilla potato chips and crispy vegetables, this makes a great game day snack or party appetizer!

This velvety, cheesy beer cheese dip is a classic of game day (I would like to have match day in the UK as they do in the US!!). The salty, delicious, cheesy flavour with just a hint of Cayenne is easy to make and is always a show stopper on the buffet table.

Whether there’s a light rain on baked tortilla chips, which are used as dough balls, fried pickles, or dip in fried jalapenos, it’s the ultimate no-fass party dip! Furthermore, if you have a larger gathering, you can refrigerate it, which allows you to proceed with it in a larger batch.

Beer: I use Hawkstone or Devon Rock Lager. Both are similar to light IPA (Indian Pale Ale).
If you don’t like the hoppy or malt flavors, go with the regular lager.
If you’re more hoppy, use your favorite robust IPA.
A more robust beer/lager/ale brings a stronger, more complicated flavour with a beer cheese dip. I think light IPA style lagers are a happy medium.

How to make:

First, melt the butter in a pot and whisk with flour and mustard. Then slowly pour the milk in the milk, constantly stirring with a whisk, and continue to stir, then heat up until thickened. Once thickened, stir in the beer, Worcestershire sauce and seasonings and stir to heat. Finally, stir the cheese until it’s completely melted and combined and you’re done!

Can I move on?

It can be stored in the fridge in an airtight container for up to 3 days. If you want to reheat, heat thoroughly in a pot and stir frequently over medium heat to maintain a smooth texture.
Note: Reheating at first will cause it to become rough, but those lumps will disappear when the dip is heated.

Cool the dip, transfer to an airtight container and freeze. Thaw in the fridge overnight, reheat thoroughly in a pan, and stir frequently over medium heat to maintain a smooth texture.

Melt the butter in a large pot over medium heat.

45 g (3 tablespoons) Unsalted butter

Add flour and Dijon mustard and stir using a whisk for 1 minute.

4 tablespoons plains (all-purpose) flour, 1 tsp Dijon Mustard

Pour the milk slowly, whisk (just stirring, not whisk, stirring) until all milk is incorporated. Be sure to stir directly onto the edges to prevent the butterfool mixture from being left there.

240 ml (1 cup) of full fat milk

Spin the heat to medium height and continue to stir. As the sauce begins to approach the boiling point, it becomes thicker.

Turn off the heat and add the beer, Worcestershire sauce, garlic powder, cayenne pepper and black pepper and stir together.

180 ml 3/4 cup beer or lager, 1/2 TBSP Worcestershire Sauce, 1/2 tsp garlic powder, 1/2 tsp cayenne pepper, 1/2 tsp black pepper

Stir for 2 minutes and let heat pass through.

Add the cheese and stir for another 2-3 minutes until the cheese melts.

300 g (3 pack cups) Grated cheese

It can be stored in the fridge in an airtight container for up to 3 days. If you want to reheat, heat thoroughly in a pot and stir frequently over medium heat to maintain a smooth texture.
