This recipe is simple, but very flavorful and stuffed. One potato is the whole meal! Who doesn’t like the soft, pillowy baked potatoes served with melted butter and gooey cheddar cheese? We gave your basic baked potato an upgrade and loaded it with tender, smoky pulled pork.

Serve with classic Caesar salad or summer favorite, strawberry spinach salad.

Why our recipes

Have you ever pulled the remaining pork? Make good use of it for a simple weekday dinner. The options for toppings are endless. Some of my favorites include jalapeno slices, crunchy fried onions and homemade nacho cheese sauce.

Do you like pulled pork sandwiches? Forget the bread and use potatoes! There are many great ways to use the rest of the pork, but this is definitely one of them. If you’re pushed by time, pick up some store-bought pork, then one night you can make nachos into a sandwich, make the next nachos, forget about this flavorful, filling potato, perfect for a busy weekday meal. Please don’t.

Ingredient Notes

Potatoes: Choose medium-sized, fresh, fresh potatoes, about the same size. Olive oil: Neutral edible oils such as avocados and vegetable oils can also be used. Shreddar Cheese: Better than cheese with newly shredded melts, including additives to prevent coagulation. Pulled pork: Use leftover, homemade pulled pork, or store-bought. BBQ Sauce: We did a blind taste test and the craft was on top! If you feel ambitious, try our homemade sauce! Sour Cream: Plain Greek yogurt can be used as an alternative. The flavor and consistency are similar, usually low in calories and fat. Green Onion: Can be replaced with chives for the same yet gentle onion flavor.

I pulled the pork

Don’t know which one you pulled? We love pork pulled on slow cooker honey chipotle, pork kalua or ham pulled. You can also keep it simple and use store-bought pork!

Potato Options

Other types of potatoes can be used, such as sweet potatoes, Yukon Gold and Red Potatoes. However, keep in mind that the different types of potatoes have different textures and sizes.

Yukon gold or red potatoes are much smaller than russet potatoes, but they definitely work and can even be used to turn this dish into an appetizer. Sweet potatoes are more similar in size.

Microwave Options

You can always use the microwave to cook potatoes. Punch holes in the potatoes as shown, rub them with oil and salt, and microwave for 5 minutes. Turn it over and then microwave it for another 5 minutes. It is done when the fork easily enters the meat.

Storage and reheating procedure

To store leftovers, let the potatoes cool completely before wrapping half of each potato in plastic wrap or aluminum foil. Place the wrapped potatoes in an airtight container and store in the fridge for up to 4 days.

Reheat in a 350°F oven until warmed for about 10-15 minutes. Reheat in the oven to make the potato skin clean and crispy. Leave the potatoes wrapped in aluminum foil for the oven.

Reheat in the microwave for 1-2 minutes or until warm. Be sure to remove any aluminum foil or plastic wrap.
