Welcome to the weekend, my friends! It’s not too warm, but the sun is shining and it finally feels like a warm day. I know I’ve been talking at length about how much I love winter, but this year? I’m craving some sunlight and warm days.
In this week’s blog, Queso Fandid is the dream of a true cheese lover. Can you imagine something more appealing than a frying pan with bubbly hot cheese and spicy chorizo topped with fresh coriander and green onions served with tortilla chips? Certainly not possible!
If you’re looking for a pleasant, hearty meal that’s perfect for a chilly night, this creamy corn chowder with chicken is the perfect recipe to try. It’s packed with flavor thanks to a combination of tender chicken, sweet corn, green chili, tomatoes and creamy soup spices.
The creamy beef pasta tastes like an effort to make for dinner, but it’s very easy to make. Everyone will love this bite-sized pasta and a bowl full of ground beef with beef tipsy cream sauce.
Made with soft flake mimic crab with crispy fresh celery, fragrant onions, sliced black olives, herbal mayonnaise dressing and a deli classic crab salad. Very good whether served in rolls, lettuce wraps or crackers!
I was a little obsessed with the spinach artichoke pasta I shared with you last week. Apparently we’re a flock of artichoke dip lovers here.
Sweet cream and orange juice come together in this simple homemade ice cream recipe. If you like creamsicles as a child, you may find yourself fond of orange ice cream.
Chocolate-covered popcorn can turn any occasion into a party! This is the ultimate salty snack and is as easy as 1-2-3.
What I’m craving: This creamy butternut squash soup caught my eye this week and it’s perfect for chilly nights.
My favorite of the week is this New Testament Journaling Bible, bound by this ESV spiral. I stumbled over it a few weeks ago and I fell in love with it. This is a pretty sized journal (too big to carry with me), but now I live on my desk. The margins are generous and lined up. You can easily cross-reference all your notes in the Bible. I now have the remaining Bible (four journals covering all of the Old Testament books) on my wish list.
What I listen and see: Mike Winger’s poems from a study of Roman poetry have been engraved all over the place for me recently. I’m sure I’ve seen about half a dozen of these videos, and I’m looking forward to each new lesson.
What I’m Reading: Pride and Prejudice by Jane Austen. I have a confession I make. This is probably my fourth or fifth attempt at going through this book (but it’s at least 15 years). I hardly put books on it. I almost finished reading it and I just want to punch Wickham and can’t wonder if I’ll finish thinking Darcy is great.
“Those who await the Lord must renew their strength. They must attach to wings like Eagle. They run, do not tire; they will walk, they will not pass away.” Isaiah 40:31 ESV
Wishing you a beautiful week filled with little things that will make you smile!
