Queso Fandid is the dream of a true cheese lover. Can you imagine something more appealing than a frying pan with bubbly hot cheese and spicy chorizo ​​topped with fresh coriander and green onions served with tortilla chips? Certainly not possible!

Queso Fundid

This is one dish my companions go to every time they see it on the menu. It’s not hard to understand when you realize that it’s basically a frying pan filled with melted cheese and brown chorizo!

Of course, there’s more to it. I would like to choose the most melted and stretchy cheese possible in my recipe.

What is Queso Fundid?

Our preference is to use grated Queso Quesadilla cheese. If you’re having trouble finding queso quesadilla cheese at the grocery store, you may be able to find “quesadilla melted cheese” already carved in your bag.

Usually it’s a blend of Jack, Chihuahua and Oaxaca cheese. If you can’t find either, you can definitely grab a Jack cheese and a Chihuahua or Oaxaca cheese and grate it yourself. Both options work fine here.

It is important to note that this dip is best made just before serving. It’s not so nice when reheated, so this recipe is not a great candidate for making in bulk like planned leftovers.

Queso Fandid Recipes

To make this glorious dip, you need the following ingredients:

Chorizo ​​que so que sadilla cheese option, but tasty: coriander and green onions

The best skillet for work is, in my opinion, a cast iron skillet or a heavy stainless steel skillet. The reason for this is that it moves seamlessly between the burnt cooktops in the oven that melts chorizo ​​and cheese.

And the weight of the bread is also a bonus here. It retains heat and keeps your soak at a good temperature to eat longer than a light, thin pan.

Queso Fundid Con Chorizo

To make the cheese “Con Chorizo” (using Chorizo), start by preheating the oven to 400°F.

Cook the chorizo ​​in an ovenproof, in a heavy skillet over medium heat. Stir to pieces while cooking.

The cooked chorizo ​​still looks a little wet, but it turns brown. Remove from the stove.

Shred or disintegrated cheese. Sprinkle the cheese over the meat in the pan and place in the oven. Bake for 6-10 minutes until completely melted and foamed.

Sprinkle with coriander or green onions before serving with tortilla chips.
