My second year roommate introduced me to Law and Order SVU. Once a week, we watched the episode while eating either a chicken cordon blew or a New York Burrito in the freezer from the other side of town. Those frozen chicken cordon blew were flashy and I enjoyed every bite.
With children, all of that content can no longer do a little more for the soul. And I really can’t get behind frozen chicken logs, so I needed a new recipe to regain the nostalgia. This casserole is just that.

Preparation: Preheat the oven to 350°C and spray an anti-stick spray on a 9 x 13 inch baking dish. Cook the chicken: Add oil to the frying pan over medium-high heat. Make a topping: Add butter in a small pot, then add panko breadcrumbs to melted butter and stir until browned. Sprinkle breadcrumbs over the casserole. Bake: Place the casserole in a preheated oven and bake for 30-35 minutes. Serve and have fun!

If you are using rotisserie chicken, skip this step. Add 1 tablespoon of olive oil to the pot over medium high heat and season the chicken with salt and pepper. Add the chicken and make it medium low. Cook on one side for 5-7 minutes or until cooked. Move to the cutting board and rest five minutes before chopping.

Meanwhile, melt the butter in a pot over medium heat. Whisk the flour and bubble it over for about 2 minutes until you toast with a bright golden brown.
