My family loves this butter Cajun corn! Cook the corn in foil packets to ensure that the corn remains soft and juicy. Use the grill or oven!
Make the most of the corn season with this incredibly tasty Cajun corn made from outrageously delicious Cajun butter. When the corn season comes, you’ll jump at the chance to make this corn recipe. It’s easy and fast, and you can use the same Cajun butter to make other recipes like this Cajun shrimp!
In this recipe, corn is cooked in foil packets, like corn served with chipotle butter. You can use the oven or grill depending on what you’re making. If you have any corn left, I highly recommend storing it for your favorite batch of corn salad (the best!).
Important ingredients
Corn: I love making this recipe with corn on the cob, but of course you can cut the cob into small pieces or use a corn kernel cut from the cob. When purchasing fresh corn, look for corn ears in tightly wrapped shells and avoid slimy or dark things. Butter: I use salted butter, but please exchange it with unsalted and add salt to add flavor. Room temperature or softened butter makes Cajun butter so easy, and set the butter about an hour before. Cajun seasonings: Use a blend of seasonings you buy from your favorite store, or make your own Cajun seasonings with hot paprika, sweet paprika, chili powder, thyme, sugar and salt. Garlic: I love putting garlic in my flavourful butter and perfume it on corn. Very good! Herbs: Add a little chopped coriander for color and flavor, but parsley is also excellent.
How to make Cajun butter corn
The Cajun flavored butter used in this corn recipe is the same as that used for Cajun shrimp. As mentioned before, we use our favorite Cajun seasonings, but if you prefer your favorite, you can replace your favorite. One thing I like about this butter (except how delicious it is) is that you can make it in advance and store it in the fridge or freezer for another day to use. Perfect for other vegetables, shrimp and chicken.

To make corn, spread Cajun butter all over and wrap it in foil. Place the foil wrapped corn in a grill or preheated oven and cook until tender. Next, when serving, make sure to pour the hot butter remaining at the bottom of the whole corn foil packet. It’s amazing!

This Cajun corn is ridiculously flavorful and the corn is cooked in foil packets, so the corn is super tender and juicy. Instructions for grilled corn and oven roasted corn can be found below. Both methods work very well!

You will need it
Four ears corn, shacking
4 tablespoons room temperature butter
Two cloves garlic, finely chopped and grated
2 tablespoons of coriander or parsley leaves, chopped
Use 1 tablespoon of homemade Cajun seasonings or store-bought items

1To cook on the grill, preheat a gas grill between 400°F and 450°F for about 10 minutes. For charcoal grills, when the coal appears gray and white, they spread out and push them onto one side of the grill, creating a hotter, more direct cooking area. Depending on the charcoal, it may take more than 30 minutes.
2If roasting in the oven: Heat the oven to 400°F (200°C) and place the oven rack facing towards the center.
3Make Cajun butter: Mix 1/4 cup room temperature softened butter with 1 tablespoon of Cajun seasoning, 2 tablespoons of finely grated garlic cloves, and 2 tablespoons of chiracon.
4Prepare corn: Using a spoon, spread the butter evenly over the corn ears. Next, place the buttered corn on aluminum foil and wrap it tightly to create a packet.
5Grilled Corn: Place corn packets on indirect heat (cool area of the grill) to prevent burning, cook cooking for 10-15 minutes, and flip the packets in the middle of cooking time.
6Roasted Corn: Place the corn packets on a baking sheet, bake for 20-30 minutes, then flip once during roasting.
