This gluten-free blueberry lemon bunt cake is a simple and healthy dessert, and a healthier twist on classic sweets. Naturally sweetened with honey, this cake has a cozy natural sweetness that goes perfectly with a burst of juicy blueberry on every slice.

Made from a blend of almonds and oat flour, this cake is soft, moist and completely gluten-free. Not only is it gluten-free, but it also contains refined sugar, making it a great option for those looking for a lightweight yet luxurious dessert. The vanilla touch and lemon peel hints bring the flavor back to life.

Perfect snack for brunch, casual afternoon snacks, or special desserts. Easy to bake and full of natural good, this Bundt cake is a delicious way to satisfy your sweet teeth without refined sugar!

How to make a gluten-free blueberry lemon bunt cake

Start by preheating the oven to 350°F (180°C). Gentle butter, prepare a 9-inch or 10-inch (23-25 ​​cm) bunt pan, dust the oat flour to prevent sticking.

Next, prepare the dry ingredients. In a medium bowl, whisk together the oat flour, almond flour, salt and baking powder. Set the mixture aside.

In a separate bowl, cream honey/maple syrup, butter and vegetable oil until smooth and creamy.

Add eggs one at a time and mix with each addition. Mix the vanilla extract and lemon zest to enhance the flavor.

Lower the mixer and gradually add dry ingredients alternating with buttermilk. Continue until all the ingredients are fully incorporated to make a smooth batter.

Throw blueberries in 1 tablespoon of oat flour and incorporate them into the batter. Pour the batter into the prepared bread and spread evenly.

Bake for 50-60 minutes or until the toothpick inserted in the center is clean. If the top starts to brown too quickly, gently cover it with aluminum foil and continue baking.

Let the cake cool in the bread for about 10 minutes, then carefully flip it onto a serving platter. Dust of natural powdered sugar, like stevia and monk fruit sweeteners.
