The golden fried turkey minced with a lovely sweet spicy flavour, stuffed in crunchy lettuce leaves and topped with all the toppings! No knife and fork are required. I wrap these turkey lettuce in a big board or tray and everyone digs in!

Nikki’s recipe notes
These turkey wraps make for a great light lunch or dinner. About 20 minutes from the fridge to the table – they make it quickly – and they are very tasty and full.
I like them lunch as a simple high protein meal. They are pretty light to carbohydrates, but if you want to add carbohydrates, you can also add rice to the filling.

Pro tips
Baby Gem or Little Gem Lettuce is perfect for these wraps. It’s a small version of romaine lettuce. The leaves are smaller, but they are flavorful and crisp, making them perfect for holding hands. If you can’t get a baby gem, Bibb Lettuce (also known as butter lettuce) is a good exchange. The leaves are softer, but still flavorful and smaller.
I love serving this as a light dinner or lunch!

Do you want these wraps to be more substantial?
If you want to make these wraps a little more substantial, you can add some rice. Add a tablespoon of boiled fresh/steamed rice to the lettuce leaves, or add 200g of cooked rice to the pan with pre-cooked turkey and stir together, then spoon into the lettuce leaves.
