Homemade strawberry jam is pure summer in a jar. Sweet, bright and full of authentic strawberry flavours, this recipe keeps the fruits star-like. The texture is also perfect…not only is it tucked into the luscious spreads and pastries needed for warm toast, but it’s not hard. My recipe keeps it simple, skip unnecessary steps and serves jams that you’re proud to share (or keep everything to yourself).

This strawberry jam recipe uses only a few ingredients, but each one is important. This is a simple breakdown, so I know exactly why everything is here:
Strawberries – Fresh and ripe make the best jam. Summer strawberries are invincible, but can also be frozen in a pinch. Granule Sugar – Balances the acidity and helps to preserve the jam. Lemon Juice – Brightens the flavor and works with pectin to help with jam sets. Liquid Pectin – Ensures complete jam consistency. Butter – As the jam boils, it reduces the foam a little.


How to make strawberry jam
Making jams may sound complicated, but they are surprisingly fast. You’re basically cooking the fruit, adding sugar and letting it set. that’s it. For more information on the complete recipes, such as ingredients and measurements, see the printable recipe cards below.
Step 1: Prepare the strawberries


Washing, hull, sliced strawberries
Place in a large pot + mash (or blend for smooth jam)
Step 2: Start cooking


Bring it to a boil + stir in lemon juice and pectin
Step 3: Make it sweet


Add sugar + butter and stir until dissolved
Step 4: Bring it to a boil and finish


Bring it to a slow boil, bring it in for 1 minute, then pull it out of the heat.
Step 5: Jar It Up


Fill a very clean jar, wipe the rim, add a lid, and let it cool at the counter before moving to the fridge or freezer
Pro Tip: I want to run the jars through a dishwasher quick cycle with high heat levels.


Pro Tip: If stored and long self-life is desired, these jars need a water bath. This is not the recipe. These should be stored in the fridge.
Tips for success
Don’t skip the lemon juice, it’s what helps with the jam set. If you like thick jams, use a potato masher to smooth out the blender. Take a close look at your boil… only takes 1 minute. The jars are pre-sterilized so they are ready when the jam is hot.

Strawberry jam recipe
Homemade strawberry jam captures the sweet, fresh flavor of the peak strawberry season. Perfect for spreading over toast, biscuits or your favorite dessert.

Instructions
Wash the slices, cover the strawberries and place in a large stock pot.
Turn on the heat at medium highs and start mashing the strawberries with a potato masher or meat chopper. Keep the chunky as you want. For a very smooth consistency, place it in a blender before adding it to the pot.
It increases the heat and brings a light boil.
Add freshly squeezed lemon juice and liquid pectin and bring to a boil, stirring constantly.
Add granulated sugar and butter. Stir until the sugar is completely dissolved and the butter is melted.
Bring it to a boil slowly and continue to boil for 1 minute.
Remove from the heat and fill a very clean jar* leaving 1/4 inch of headspace.
Use a clean damp cloth to wipe the rim. Carefully place the disc lid and then place the ring**.
Cool on the counter before moving to the fridge or freezer.
Note
**If it is stored and a long self-life is desired, a water bath is required. This is not the recipe. These should be stored in the fridge.
Storage Instructions
Store the jar in the fridge for up to 3 weeks. For longer storage, place the frozen jar in the freezer for up to 1 year. If you want the shelf stabilization option, you will need to process the jars in a water bath, but this recipe is written solely in fridge or freezer storage.
