I seeded Dubai filled pastries, parfaits and Dubai chocolate inspired spreads. So why not fill in the date with this incredibly addictive combo for the perfect sweet snack bite? The date adds the perfect caramel, like creamy, crunch filling and a beautifully functional, chewy texture. I like to soak them in bittersweet chocolate, but milk chocolate also works! Next, crush the finely chopped pistachios and crushed kataifi, then place in the fridge and set it.

To make these packed dates in Dubai, you need them.
Medjool Dates – Choose soft, fresh dates with pits. Pistachio Butter or Cream – Homemade or I link to Pistachio Cream in printable recipes. Toasted Kataifi – A pastry dough made up of very thin toasted chains. Linked to printable recipes. Chocolate Chips – I like using dark chocolate, but milk chocolate is also great! Coconut oil – helps you set the chocolate when chilled. Lightly salted pistachios – for sprinkling covered and filled dates.

Slice dates 15-18 along one side and remove the pit.

Repeat with the remaining dates and set out to the side.

Make a filling:
In a medium mixing bowl, add pistachio cream (or pistachio butter) and 1/3 cup toast kataifi.

Use a spatula to mix gently.

Use an offset spatula to add a bit of pistachio filling to each date. The amount of dates you need really depends on its size. Larger dates require less because you use more stuffing. If they are on the small side, they will need more dates.

Transfer to a small lined baking sheet and refrigerate for about 10 minutes.

In another medium bowl, add 1 teaspoon of coconut oil, measuring 1 cup of bittersweet or milk chocolate chips.

Next, place the bowl on a shallow boiling pot of water. Stir until it is almost melted, then carefully remove the bowl from the saucepan and continue to stir until the chocolate is smooth.

For these, I want to place the buried date on a fork and soak the underside in melted chocolate.

Then use a spoon or spatula to pour more melted chocolate over the top. Gently tap the fork to allow the excess chocolate to return to the bowl below.

Return the covered chocolate to the covered date to the lined bread and repeat with the remaining dates.

Sprinkle with chopped pistachios and crushed toasted kataifi.

Once done, put the bread back in the fridge to cure the chocolate.
