Packed with sweet butternut and hearty kale – a comfortable, comfortable meal in cold weather – a thriving base of tomatoes to taste the quality of the restaurant! My winter minestrone doesn’t have a flooded noodle drama. Cook the pasta separately to maintain its elasticity and leavens do not turn into starchy stew. Finally, I finish the pot with a sprinkle of lemon, good old olive oil and Parmesan.

I use fresh herbs (sage, rosemary, thyme) and pinch of chili flakes. Your kitchen smells like a small Tuscan tratoria (no more airfare). The soup is very flexible: you can swap butter beans for cannellini or northern beans, and kale for spinach.
The butter beans become creamy without cream, and the whole thing comes together in about 40 minutes and are firmly placed in the territory of a weekday dinner. Conclusion: It cannot eat at a stop – the kind of soup you will stuff for lunch and willing to eat again for dinner. Kale Options: Lacinato Kale quickly tender and has a mild flavor, but Curly Kale is often inexpensive and works beautifully with this recipe. Beans: I love using butter beans when adding creaminess in Minest Lawn Soup this winter, but Cannellini and Great Northern Beans make great alternatives. Tomatoes: I made a slightly thicker soup using a 28-ounce can of crushed tomatoes. Alternatively, you can use tomato puree to make the soup smoother and thicker. Herbs: I love using fresh herbs like sage, rosemary, and thyme. If you use dried herbs, reduce the amount by a third. Alternatively, replace all fresh herbs with 1½ Italian seasonings if necessary. Vegetarian Options: Soup Replace chicken broth with vegetable broth to maintain vegetarian.

What is Minest Lawn?
Authentic Minestrone is a regional Italian vegetable soup made on seasonal produce, beans, small pasta and rice, often starting with sofrito and sometimes with a Parmesan rind. The soup is usually a vegetable. The exact ingredients vary depending on the season and location.
My version honors its spirit with winter vegetables (butternut, kale), beans, small pasta and classic herbs. I skip the onion/carrot to shorten the preparation, use tomato forward soup, and (optionally) use the chicken for the extra body. The pasta is cooked separately and finished with lemon, making it fun and ready for meals on weekdays.

Cooking Tips
Cook the pasta separately: I like to cook the pasta alone (apart from the soup) to avoid absorbing too much soup. Add it to the pot only when it’s ready. Temporarily brown the squash before simmering to add a nutty roast flavor. Stir in medium heat while frying the celery and butternut. This allows the vegetables to be toasted lightly without turning them brown, which can make the celery tougher. Do not bring to a boil: Instead of slowly boiling the soup, simmer in a gentle stew so that the vegetables are evenly tender without falling apart. Streamline preparation time: With a little practice, you can prepare this recipe in just 30 minutes. Start by boiling the pasta water while setting up the ingredients. Prepare celery, butternut and kale while the water is heated. Cook the pasta while stirring the vegetables, drain and rinse the beans while the soup is simmering.
