There’s something comforting about perfectly seasoned potatoes. Crunchy on the outside, soft on the inside, and bursting with flavor with every bite.

Whether it’s a busy weekday or a festive holiday gathering, seasoned roast potatoes are versatile enough to pair perfectly with hearty meals like this Chickpea Veggie Bread, creamy vegan casseroles, or even lunch sandwiches like this Panera Bread Copycat Mediterranean Vegetable Sandwich.

Very similar to my Air Fryer Home Fries, these roasted seasoned potatoes add a hint of spice and seasoning to achieve restaurant-style crispiness with minimal effort.

Why this recipe works

It’s a very simple seasoning that will make any potato more delicious than it needs to be. Two cooking passes in the oven or air fryer ensure crispy potatoes no matter the setting. Very simple, no soaking or boiling required, all you need is high heat and the right ratio of spices. Works with Yukon Gold or Russet so you can use what you already have. They stay crispy even when reheated, making them perfect for meal prep on the go.

Ingredients for making roasted seasoned potatoes - oil, spices, potatoes

Potatoes: Yukon Golds have the perfect balance of crisp edges and soft centers. If you want even more crispness, russet is effective. If using baby potatoes, dice them in half so they cook faster.

Olive oil: Helps seasonings settle and creates even browning. Avocado oil can also be used in this recipe.

Seasoning mix: This recipe calls for garlic powder, onion powder, paprika (or chili powder if you like it spicy), dried herbs, salt, and pepper.

How to make roasted seasoned potatoes in the oven

Heat oven to 425° F. Cut the potatoes into 1-inch pieces and cook at the same speed.

Pat dry to make sure it’s crispy but not soft. Place them in a mixing bowl, add oil and mix until all parts look shiny.

Then add the spice mix and coat well so the roast retains its flavor. Spread the potatoes in a single layer on a sheet pan.

Spread evenly. Space is important here. Crowds kill crispy food.

Bake until edges are golden brown (about 30-35 minutes). Turn or shake once halfway through baking to ensure even browning. Remove when the center is soft and the outside is slightly crispy. If you want a refreshing finish, add some fresh herbs.

Air fryer method

The method of making an air fryer is almost the same. The only noticeable difference is temperature and time.

Listen before you set your airfryer to 400° F.

Cook for 15-20 minutes. Shake the basket halfway so the potatoes are browned on both sides.

When the edges look crispy and the center feels soft, pull it out.

Pro tips for making perfectly seasoned potatoes

Here are my top tips for making perfectly crispy seasoned potatoes every time.

Dry the diced potatoes well before adding the spices. If using the fryer, reduce the oil by 1 tablespoon. Too much oil can cause the basket to smoke. Cut the potatoes into equal-sized pieces so that they cook evenly.

Can I use raw garlic?

Not recommended. Raw garlic can burn in high heat. Garlic powder is safer.

Instructions

Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly oil it.

Cut potatoes into bite-sized cubes or wedges, about 1 inch. You can also leave the skin on for added texture and nutrition.

In a large bowl, fry potato pieces in olive oil until evenly coated. Add garlic powder, onion powder, paprika, dried thyme, dried rosemary, dried oregano, salt, and pepper. Mix again until potatoes are well coated with seasoning.

Spread the seasoned potatoes in a single layer on the prepared baking sheet. Roast in the preheated oven for 30 to 35 minutes, turning halfway through, or until potatoes are golden brown and crispy on the outside and fork-tender on the inside.

Remove from the oven and transfer the roasted potatoes to a plate. Garnish with chopped fresh parsley or chives, if desired.
