These buttery, garlicky mushrooms come out perfectly browned on the outside and tender on the inside every time.

Ingredients and Substitutes

Mushrooms: You can use white button mushrooms, brown mushrooms, cremini mushrooms, or baby bella. All varieties cook beautifully and develop a deep flavor when roasted in a hot skillet.
Unsalted butter: Use unsalted butter to adjust the seasoning. Melt some first to sauté the mushrooms and finish the rest at the end to create a glossy buttery sauce.
Fresh Garlic: Freshly minced garlic adds aroma to every bite. Don’t skimp here! This recipe is meant to be a bold take on garlic.
Aroma: Thyme pairs beautifully with mushrooms, but you can also use rosemary or parsley. The herbs add an earthy freshness and balance out the richness of the butter.

Important: Do not soak or rinse the mushrooms. Use a damp paper towel to wipe away stains. Mushrooms act like sponges and absorb water. Water will be released during cooking, diluting the sauce. We will show you the correct way to clean mushrooms. Do not crowd mushrooms. If you overcrowd the mushrooms in the pot, they will release steam instead of burning. The result is a watery garlic sauce instead of a creamy butter sauce. Cook in batches if necessary to achieve the perfect golden brown. Don’t skimp on butter or garlic. You can never have too much garlic when it comes to this recipe. The timing of applying the butter is important. Add the garlic and remaining butter at the end of cooking to prevent burning and balance the flavors. Mushroom size: Larger mushrooms will take a few more minutes to cook. Just keep an eye on it and stir occasionally.

Instructions
Preheat a large skillet over high heat. Once warm, add the olive oil.
Add the mushrooms, lid side down, and allow to caramelize, about 3 minutes. 5 minutes. Do not move them during this process. You may need to do this in multiple batches to avoid overlapping mushrooms. (*Note 2)
Once caramelized, stir and simmer for another 5 minutes. (*Note 3)
Add 2 tablespoons of butter and mix. Cook for 5 minutes until golden brown.
Add garlic, thyme and salt and sauté for 2 minutes.
Add remaining butter and lemon juice. Stir and cook for 1 minute.
Transfer to a plate and top with salt (optional) and parsley.
Serve immediately.
Precautions
