How to make Romanian rustic potatoes
Start by boiling the potatoes with their skins on. Rub them well without peeling them, put them in a saucepan and pour cold salted water. Bring to a boil and cook for 20 to 25 minutes, until tender when pierced, but not mushy. Drain the water and let it cool slightly.
Peel the skin while still warm (it should peel easily) and cut the potatoes into thick slices or large rustic chunks.
Heat plenty of oil in a wide pot. Add onions and cook over medium heat until soft, glossy, and lightly golden. Add red bell pepper and cook until softened, 2 to 3 minutes.
Lower the heat, add the paprika, and stir briefly for a few seconds to ensure it blooms without burning. Add the sliced potatoes and salt, mix everything gently and coat with paprika oil. Cook, turning carefully, until some edges are lightly crispy, 5 to 8 minutes.
Taste and adjust the salt, remove from heat, sprinkle generously with chopped parsley, and serve.
