Pancit is a typical Filipino noodle dish made with stir-fried meat, vegetables, and rice noodles in a flavorful soup. This pancit recipe is a quick and easy noodle dish that can be on the table in under 30 minutes.


Growing up in Hawaii, our neighbor Ginny often brought this recipe to neighborhood cookouts. She taught my mother this pancit recipe and lumpia recipe. Since then, these dishes have become a family favorite.
This dish can be made ahead of time and is also delicious straight from the fridge. Easily reheat in the microwave if needed.

Noodles made from rice flour and cornstarch. Sometimes called rice sticks. You can easily find it in the ethnic section of your grocery store. You can order online. Garnish with green onions and lemon slices or wedges. In my opinion, freshly squeezed lemon juice is essential to give this noodle dish the right flavor balance.
How to make pancit
Place noodles in a large bowl of cold water to soften. Let’s put them aside. (*You can also skip this step and add the dried noodles directly to the pot with the soup. I often do this.) Mix the eggs and cornstarch. Place the chicken and shrimp in separate bowls and mix together with the egg mixture. Set the bowl aside. Heat a large skillet or wok over medium-high heat. Add oil and fry onions until soft and translucent. Add garlic and fry for a few minutes. Add chicken to pot. Stir-fry until heated through. Add shrimp and pork. Fry for 3-4 minutes. Add soy sauce, pepper, and chicken stock and bring to a boil. Add peas, carrots and cabbage. Simmer for 3 minutes. Drain the noodles and add to the pot. Boil the noodles until they absorb the water. Use large tongs to mix the noodles with the meat and vegetables. Add the sliced green onions and lemon juice. Serve garnished with extra lemon slices.

Heat a large skillet or wok over medium-high heat. Add oil and fry onions until soft and translucent. Add garlic and fry for a few minutes.

Add chicken to pot. Stir-fry until heated through.
