Anyone can make, no bake, 4 iconic German desserts

I first heard of Kalter Hund in 2019. In 2019, the Home Cooking App published an article on German Culinary Classics and published a video series titled Strange German Cuisine. In the video, me and some of my international colleagues had to guess what German food was just “strange” names.

The Kalter Hand, or the German “cold dog,” clearly made that list, but fortunately, it’s not as strange as it looks.

Calter Hand, sometimes known as the English word “German Hedgehog Slice,” is a simple chocolate and biscuit dessert, and is like a cross between a rich chocolate icebox cake and Rocky Road. In Germany it is considered nostalgic, retro sweet. The recipes seen today come from Schokoladenkuchen aus leibniz-keks (literally “chocolate cake with Leibniz cookies”), published by the German company Bahlsen in the 1920s.

Creating a Kalter Hund is easy. Simply melt the chocolate with coconut oil and heavy cream. Once it’s completely smooth, layer it on a lined bread with butter cookies and chill in the fridge until it’s solid enough to slice into thick pieces and serve.

How to provide it

Kalter Hund is a humble dessert that can be served as is and enjoyed, but it is fun and easy to decorate. They are often wrapped in large plates or cake servers, topped with chocolate icing and finished with sprinkles, chocolate shavings, fresh fruit, or coconut.

You can also serve small amounts of ice cream or whipped cream slices to balance the richness of the chocolate.

Easy adjustment

This candid no-bake dessert is usually made with just four simple ingredients, but there is room to play with them and switch to your liking. Here are some swaps and alternatives you can make.

For a slightly lighter, less rich flavor, use biscoffe cookies, graham crackers, digested biscuits, or your favorite thin cookie (thicker than about 1/4 inch) plain butter cookies, using a bittersweet chocolate mix, undelivered with squirrel squirrel squirrel squirrel squirrels with a bittersweet chocolate mix. Easier No Bake Dessert

Cook Mode
(Wake up the screen)

18 Ounce (3 cup)) Chopped bittersweet chocolate (65% cocoa)

3 A large spoon Coconut oil

3/4 cup plus 1 A large spoon Heavy cream,room temperature

1/4 Small spoons Kosher salt

5 Ounce thin Butter cookiesif possible, Leibniz butterquicus or Petit Veil (approx. 36 cookie))

Prepare the bread:

Arrange standard loaf pans with plastic wrap or parchment paper, and use pieces large enough to cover the entire pan and cover additional overhangs on the sides.

Melt the chocolate mixture:

In a medium microwave safe bowl, mix the chopped chocolate and coconut oil. The microwaves are high in 20 seconds increments, stirring each time with a spatula, scraping the sides and bottom of the bowl well, and about 2 minutes until it melts. Add the cream and salt, mix and stir until smooth.

layer:

Pour a little bit of chocolate mixture into the lined bread, only enough to cover the bottom. Put as many butter cookies as possible into the bread without breaking or stacking them (need a uniform layer). Pour more chocolate mixture on top to cover the cookies. When adding layers, gently tap the pan on the work surface to level the chocolate.

Repeat until you use all the cookies and chocolate. Depending on the size and shape of the pot, and the type of cookies used, you should get 6-8 layers that end with chocolate.

Chill:

Fold the overhanging plastic wrap, cover the top, place in the pan in the fridge, and let it cool thoroughly for at least 5 hours.

Slices and Serves:

Thaw the top of the cake, then flip it onto the cutting board and remove the wrap. Run the chef’s knife under hot running water and dry it with a clean towel. Slice the Kalter Hunds into 1 inch thick slices with a hot knife, reheat and serve as needed.

Return the remaining cake to the plastic wrap and store in the fridge for up to a week or in the freezer for up to a month. You can also wrap the slices individually in plastic wrap and store them in the freezer if necessary.
