These breakfast croissant sandwiches are all that delicious breakfast lovers dream of! Flake-like croissants, crispy bacon, juicy sausages, fluffy eggs, melted cheese and killer maple mustard sauce bring it to life. It’s not exactly a healthy food, but they’re everything you’ve ever wanted (and more)!

See how this breakfast sandwich is made…

Not long ago we had been visiting our Colorado friends Dave and Sarah, who casually said we needed to try our favorite breakfast sandwich with mustard and maple sauce croissants. That was everything I needed to hear. There is no recipe or explanation. I was sold! Ah, tell me: It’s its sweet, tangy maple mustard sauce to make this croissant sandwich from good to memorable. You might just want to soak everything in it.

Are you a sweet or flavorful breakfast person? Both are very good, and it really depends on the day for me. There are days when you want something fluffy, melted pancakes with molten mouths with buttermilk syrup, or something that sticks to your ribs and is full of protein. If it’s tasty, I want to have big and full meat, cheese and eggs. This breakfast sandwich recipe is just that.

What you need to recreate this breakfast croissant sandwich:

After trying this sandwich, you’ll never want a McDonald’s Egg McMuffin again. Seriously, they get ruined. This is what you need for this life-changing sandwich:

Bacon: A crunchy, smoky strip that adds crunch and salty punch to a bite. Maple Breakfast Sausage: A sweet and delicious sausage that brings warmth and heart to your sandwich. Eggs: Soft and fluffy scrambled eggs create a creamy, protein-rich foundation. Milk: Whisk into eggs to enhance softness and richness. Salt and Pepper: A simple seasoning that enhances the flavor of each component. Colby Jack Cheese: A mild blend of cheddar and Monterey Jack, which melts beautifully on warm eggs and meat. Croissants: Buttery flake croissants are perfect soft but still serve as a kit crisp sandwich base. Chives: Chopsticks fresh chives add a pop of green green and a delicate onion flavor. Mayonnaise: A creamy base that adds moisture and richness to the maple mustard sauce. Mustard or Dijon Mustard: Sharp and tangy, slitting, slitting through the richness and balances sweet notes. Maple syrup: A natural sweetness that works perfectly with flavorful elements and gives the sauce its distinctive twist.

Check the recipe card below for detailed ingredients and accurate measurements.

Croissant me!

The croissants are perfect for flake-like butter! Hot or cold, sweet or flavorful, we take them any way! For this breakfast sandwich, slice them in half and quickly toast under a broiler or under a toaster oven to bring out a golden, crispy layer. (And if you love croissants just like us, don’t miss our grilled chocolate strawberry croissants!)

My baby has a sauce

This breakfast sandwich is about maple mustard sauce! It’s easy, but takes things to the next level. Mix in the splash of mayo, mustard and maple syrup, then spread it on those toasted croissants. (And if you’re still wondering, yes, my baby is G. Love and Special Sauce, the real song. Find out that!)

Not all maple syrup is created equally

While we’re talking about the sauce, let’s talk about the maple syrup you should use for it. I don’t want fakes. It should be real maple syrup. I like to buy lots of them at Costco and get the Kirkland Signature Organic Maple Syrup. It’s very good and reasonably priced!

How to make the perfect scrambled egg

You can’t have a breakfast sandwich without eggs. For this we love scrambling them. Here’s how you can get a fluffy, flavorful scrambled egg every time.

Start by whipping the eggs with a splash or two of milk. Milk creates extra light for them. Add the salt, pepper and shredded cheese, then let the mixture rest in the fridge for 10-15 minutes. The salt breaks down the eggs enough to make it soft, fluffy texture. When you’re ready to cook, use high heat to work immediately to avoid cooking or rubbery eggs.

Bring me the meat

Can’t you decide on bacon and sausages for breakfast? Don’t do it! I have both on this sandwich. With ground sausages you can shape them perfectly into your croissants! This means adding more sausages with each bite. Next, stack crispy bacon for the goodness of the meat in its invincible meat. It’s not the healthiest choice, but it’s definitely one of the tastiest!

Bake bacon in the oven for breakfast croissants

If you haven’t started baking bacon in the oven, stop what you’re doing and get started now! It’s hanging down in the easiest and messy way. Cooking bacon on Stovetop means grease splashes everywhere, your kitchen smells like bacon all day long, and cleanup is painful.

Baking bacon gives you perfectly crispy results every time! Here’s how: Preheat the oven to 420°F and arrange the foil on a cookie sheet. Place the bacon strips in a single layer and bake for 10-15 minutes depending on thickness. There’s no need to flip it over! Next, once it’s crispy, transfer the bacon to a plate lined with a paper towel and drain it.

that’s it! There’s no crispy bacon, zero confusion, or lingering grease smell. boom! The bacon was done right!

Ready, set, croissant time for breakfast!

Now you can put that sandwich on top with a few chopped chives, then add the top half of the croissant and consume that! It was so heartfelt! Everything is super tasty, but that maple syrup only gives the smallest hint of sweetness that perfects each bite. Need it now!

How to Freeze a Breakfast Croissant Sandwiche

These breakfast sandwiches are the best variety of versatility. Just add it to your weekly breakfast menu! They deserve brunch on Sunday mornings, but are also perfect for busy weekdays where you need something quick. Bonus: Our kids love them too!

To freeze, place the assembled sandwich on a cookie sheet and flash freeze for at least 30 minutes. Next, wrap each in a paper towel and seal it in an airtight container or frozen bag. When ready to eat, microwave the sandwich (still in a paper towel) for about 1 minute. Paper towels can be heated, wrapped and gone, as they prevent the bottom from getting soaked.

Pro Tip: If you don’t like how to thaw croissants, consider choosing hearty breads like English muffins, sourdough, or shea grasshoppers, which are especially prone to freeze and reheat.

The flaky buttery croissants are packed with crispy bacon, flavoured sausages, fluffy eggs and melted cheese, and a warm, hearty bite that makes even the busiest mornings feel like a slow Saturday. Taking the whole family to the table is like a simple, everyone-loving recipe, not flashy ingredients but real food. Breakfast victory for breakfast croissant sandwiches!
