If you’ve ever needed a cookie in a hurry because you had work coming over and you forgot dessert, this is the recipe that will save the day. Incredibly soft, these four-ingredient cake mix cookies are easy to make and even easier to eat. Betty Crocker cake mix cookies? That’s correct! ! With just four ingredients, you can create endless flavor combinations. The sky’s the limit when it comes to these cookies, and there are plenty of ideas below.
Ingredient notes + variations
These cookies only require four ingredients, but each one helps make them soft and flavorful. This is the easiest cookie dough to mix and you probably already have everything you need.
Eggs: Hold the dough together and give the cookies a chewy texture. Cake mix: Use a 13.25 oz box of cake mix (my favorite is Betty Crocker). Chocolate, lemon and funfetti all bake beautifully. Oil: Keeps cookies soft. Canola oil or vegetable oil both work perfectly. Vanilla Extract: Adds warmth and depth to the flavor of your favorite cake mix.


How to make Betty Crocker cake mix cookies
If you have 10 minutes, you can make cookies in the oven. The dough comes together quickly, so there’s no need for chilling or a mixer. For recipe details, including required ingredients and quantities, please see the printable recipe card below.
1. Preheat the oven and prepare a baking sheet
Preheat oven to 350°F. Line 2 light-colored baking sheets with parchment paper and set aside.
2. Make cookie dough
In a large bowl, combine dry cake mix with 1/3 cup oil, eggs, and vanilla extract. Now you can mix the add-ins into the cake batter. (See notes below recipe card for add-ins.)






Scoop the cookie dough balls with a cookie scoop and drop them onto the prepared baking sheet.




3. Bake the cookies and let them cool.
Place in the preheated oven and bake for 8 to 10 minutes or until puffed and edges are barely brown. No need for browned cookies. It should be matte (not shiny) and the surface should look slightly cracked.
Leave on the baking sheet for a few minutes, then transfer to a wire rack.




tips for success
Do not overcook! When you take the cookies out, they will look a little undercooked. Want thick cookies? Chill the dough for 20 minutes before baking. Use a cookie scoop to ensure uniform size (bake evenly). Add-ins like chocolate chips, sprinkles, and M&Ms make it even more delicious. Line a baking sheet with parchment paper to ensure the bottom is golden and soft.

Instructions
Preheat oven to 350°F. Line 2 baking sheets with parchment paper and set aside.

Scoop the dough into 24 even balls and place on the prepared baking sheet.
Bake for 8-10 minutes.
Remove from the oven and let cool for 4 minutes before transferring to a cooling rack.

Store leftover cookies in an airtight container at room temperature for up to 4 days.
Please make it in advance. The dough can be refrigerated for up to 2 days or frozen for up to 3 months.
To freeze baked cookies,
Let the baked cookies cool completely, then stack them on a baking sheet and freeze until firm (about 1 hour). Transfer to a freezer-safe bag or airtight container with parchment paper between the layers. Freezes for up to 3 months.
Thaw at room temperature for about 30 minutes, or if you prefer a thicker texture, warm it in the microwave for 10 to 15 seconds.

cake mix cookie options
You can use any flavored cake mix to make these cake mix cookies. I stuck with the 15.25 oz box of Betty Crocker and bought three different flavors of cake mix, as seen above. Basic plain white cake mix, rainbow chip cake mix, and chocolate cake mix! Since I wrote this recipe, the box size has changed to 13.25 oz. I find that this recipe still works perfectly regardless of this 2 ounce difference. Common flavors I’ve found at local grocery stores in my area include:

Cake mixes, cookie recipes, mix-ins
The sky’s the limit when it comes to adding different items to make your cookies special and personalize them. Lots of chocolate, sprinkles, nuts and sweets. When using add-ins, I usually say “measure with your heart,” but if you want exact measurements, use 3/4 cup to 1 cup.
Chocolate chips (milk, semisweet, dark, or white) Peanut butter or butterscotch chips Chopped candy (Butterfinger, dark chocolate, Twix, Snickers, Reese’s, Heath, M&M’s, etc.) Sprinkles (use different colors for the occasion: red, white, and blue for Independence Day, green and red for Christmas, red and white for Valentine’s Day, etc.) Nuts (almonds, pecans, macadamia nuts, etc.) Shredded coconut Citrus zest (oranges, lemons, limes, grapefruit) Dried fruits (strawberries, raspberries, blueberries, apricots, dates, figs, etc.) Mini marshmallows Chopped graham crackers Chopped candy canes Pumpkin spice + cinnamon pudding mix – The “Super Moist” cake mix already has pudding mix in it, but if you are using a mix, you cannot add a small box of pudding. It has more flavor and moistness, and a richer texture.
