Ingredient Notes

Boiled eggs: You need to make sure the eggs are boiled. For more information about that, check out our guide on how to boil eggs. If you have a short time, you can use store-bought hard eggs, but we recommend simmering them yourself for the best flavor and texture. Mayonnaise: This packs the ultimate creaminess, so don’t skip this ingredient! Salt and pepper: Used to season the filling and season with chimichurri sauce. Chimichur sauce: Mix in the Mayo filling. You can use store-bought items in a pinch or make homemade versions using fresh ingredients. Parsley: Chop parsley is a must for this homemade sauce. Flat leaf or curly parsley can be used. Garlic: Garlic new garlic offers the best flavor, but the garlic pieces that listen to work in a pinch. Olive Oil: Use high quality olive oil as it is a major component of chimichur sauce and helps to carry the flavors of all other ingredients. If you need to thin the sauce, use a little more. Chili Flakes: Used in this homemade sauce and can be used to decorate. Oregano: You can find dried oregano in the spice passageway. This will add to Chimichurri’s Herby flavor. Red Wine Vinegar: White Wine Vinegar or Apple Cider Vinegar can be used as an alternative in the same amount. Lemon Juice: Fresh is best, but if you don’t have enough time, you can use a bottle.

Boiling eggs

For all you need to know about boiling eggs, check out how to boil eggs! Using deviled eggs requires stubborn eggs, but you can turn the yolk to gray, so try avoiding overcooked eggs. For creamy egg yolks without a grey ring, aim for a 10-minute boil.

Piping Tips

Pastry piping bags (like the kinds used for frosting) give them a professional look, but the spoon works perfectly well too. If you want to pipe, but don’t have the tips of pastry bags or stuffing, cut the corners out of the plastic bag as a quick DIY solution.

I’ll tell you first

If you need to prepare the eggs of pesto devil in advance, you can definitely do it! Bring the eggs to a boil and peel them off and prepare the filling, but do not assemble them yet.

Instead, place half of the egg whites in a tray or airtight container, cover with a damp paper towel, and place a lid on the container to prevent it from drying out.

Transfer the filling to another container or plumbing bag (don’t cut the tip yet!) and refrigerate everything until ready to use. Wait within an hour or two before laying to fill up the egg whites.

Storage Instructions

Place the leftovers in an airtight container for 4-5 days.
