Jasmine rice is one of my favorites, so this coriander lime rice dish is a sure winner. I love the way fresh coriander and lime work together. And it’s another win, as it’s easy to make while you’re putting together the rest of your meals!

Ingredient Notes
Rice – I used jasmine rice. Because it is fragrant and flavorful. However, while longer grain rice is best, other types of rice can be used. Olive oil is good here, adding a bit of flavor and aiding in salt. Butter – Gives a rich flavor to the finished rice. Garlic – Fresh cloves bring the best flavor, but pre-ripe garlic also works. Coriander – Fresh coriander is a must. It has a very fresh citrus flavor and a great accompaniment with lime. Be sure to remove the stems and use only the leaves. Fresh lime rind and lime juice are used to taste the flavor of this delicious rice dish.
Add-ins and replacements
Add some spices with a bit of cayenne pepper, red chili flakes, or diced jalapeno to heat it. Replace the coriander – If you don’t have coriander, you can use fresh parsley or basil as the nearest replacement. Coriander comes from the same plant, but it tastes completely different. Add green onions – These green onions have a mild onion flavor that is perfect for garlic. Substitute rice – try this with long grain white rice, brown rice, basmati rice, or wild rice.
How to make coriander lime rice
Clean the rice. Place the rice in a fine mesh sieve and rinse with water until the water is clean. Drain completely. Next, place the colander on the plate and grab the remaining drops of water.
Pro Tip: Use either your hands or spatula/rice puddol to move the rice to remove dirt and excess starch more thoroughly.

Season the rice. Place the rice in a medium-sized pot and add the oil and garlic. Stir for about 1 minute and lightly brown the rice. Mix with clean water. Next, add water and salt and stir immediately. Cook the rice. Slowly boil the rice, cover with a lid and cook low for about 15 minutes. Please let it rest. Turn off the heat and allow the rice to rest for another 10-15 minutes.

Add the remaining ingredients. Now, fluff the rice with a fork and stir in butter, lime rind, lime juice and chopped coriander. Enjoy warm.

Recipe Tips
Do not use short grains. Short grains are perfect for sushi like sushi that you want to stick with rice on. But here is how long grains go. Clean the rice – thoroughly clean the rice and remove any dirt from it. This also runs out of some of the starch, so the rice won’t become gummies. Add coriander to the end – you don’t want to cook coriander. Add at the end for bright flavor and colour. Rice slices can be stitched together while resting, so they are fluffy with a rice paddle or fork to separate the grains.

Go ahead: Before adding coriander or other flavorful ingredients, you can make this rice dish in advance and sit and rest while you work. Or you can refrigerate it and then serve it later.
Storage: Store leftovers in a fridge airtight container for up to 4 days. To reheat, place the rice in a microwave container and add a little water. Cover with paper towels and microwave until warm. Steam from the water softens the rice and can be dried in the fridge.
Freeze: Chill the rice and then freeze it in a freezer safe ziplock bag for up to 3 months. Thaw and reheat.
