This creamy Tuscan chicken is one of those dishes that feels like it’s coming out of a cozy Italian kitchen, even if it’s technically “Tuscan-inspired” than traditional. The soft, golden eared chicken has a silky Parmesan cream sauce, with a burst of sweetness from cherry tomatoes and a touch of freshness of wilted spinach. It is rich, comfortable, and incredibly easy to make on weekday nights, but flashy enough to serve guests with wine and crusty bread.
What I like about this dish is the balance. The creaminess isn’t overwhelming thanks to the tomato tangs and garlic and cheese horse mackerel. And the best part? It all gathers in one frying pan within 40 minutes, making cleanup easy. Pasta, mashed potatoes, rice, or just keep things light, you can pair it with a bed of sauteed zucchini noodles.
Cook for your family, share with friends, or enjoy a solo on a cozy evening. This creamy Tuscan chicken won’t be disappointed.
How to make creamy Tuscan chicken
Start with the chicken seasonings and baking. Season the chicken with salt, pepper, garlic flour and dried oregano. Heat the olive oil in a large frying pan over medium-high heat.
Cook chicken to 165°F (75°C) for 6-8 minutes, depending on thickness. Remove the chicken from the skillet and set aside.
Next, fry the garlic and cherry tomatoes. Reduces heat to moderately. In the same frying pan, add the fragrant garlic and fry for about 30 seconds until it smells. Add the cherry tomatoes and cook for 3-4 minutes until tender.
Pour in the chicken soup, stir to degass the pan and scrape off any brown bits. Simmer for 1-2 minutes. Stir in the cooking cream and Parmesan cheese and simmer slowly for another 2-3 minutes until the sauce starts to thicken slightly.
Stir in fresh spinach and cook until it has withered. Return the grilled chicken to the frying pan and spoon the sauce over each piece. Simmer for another 3-4 minutes to melt the flavor.
Finally, serve and enjoy. Garnish with fresh basil if necessary. Serve the chicken with pasta, mashed potatoes or crusty bread and soak in a creamy sauce.
