This is not only a simple “set it and forget it” dinner, but it also tastes as good as the other versions. The only thing you need to be aware of is to activate the pepper. If you’re a little noisy about maintaining the integrity of the peppers, use a small chicken bid, or add a thin portion of the large chicken breast, or add pepper in half from the next hour. How to make a chicken fajita in a crockpot

1. Veggie preparation
Slice the onion and chili peppers. I used half of each color of pepper and would be welcome to use all green, all red or available color combinations.



Add the onion and pepper to a large bowl. Throw in 2/3 of olive oil and fajita seasoning. Please put it aside.


2. Crocpot layers
Spray the cold crockpot with non-stick cooking spray and add the chicken to the bottom of the crockpot. Sprinkle with the remaining fajita seasonings. Top chicken with onions and chili peppers.



3. cooking
Cover for 2-3 hours or until the chicken reaches a temperature within 165°F, cooked, and the peppers tender (not mushy).


4. I’ll finish it and serve
Shred the chicken and serve with tortillas and other desired fajita toppings (more details below).

Fajitas are best eaten on the day they are prepared, but leftovers can be stored in airtight containers in the fridge for 1-2 days. The main thing to note here is that chicken works well, but the longer the onions and chili peppers are soaked the waterier the more you sit and get.
