This enchilada style ground beef burrito recipe is stuffed with seasoned ground beef, packed with rich red enchilada sauce and secretly melted cheese for the ultimate comfort food. Perfect for a quick weekday dinner or a crowd-pleasing meal, this beef burrito recipe combines bold Mexican flavours with hearty ingredients to combine delicious and satisfying dishes that the whole family loves.

The tacos and burritos instantly make them feel nostalgic, even though we didn’t grow them too much. I actually hated ground beef because of the texture and my mother became so patient! She never forced me to eat while I was quietly melting the cheese in a tortilla instead.

My biggest tip? Don’t stress separate meals or fights at the table. My parents were just waiting for me to offer to try something new and I did well. Now I offer my kids a lot of toppings and don’t make things “gross” (seeing you, Grayson and your avocado skepticism). I ask them to try a bite and then enjoy what they like. Meal times should be peaceful and enjoyable for everyone.

I completely changed my mind about ground beef and this recipe may be my favorite. These burritos are huge, simmered in Dr. Pepper, filled with beef better than the bouillon, and covered in a rich mix of red enchilada sauce, beef stock and melted cheese.

What is an Enchilada Style Burrito?

Enchilada style burritos are burritos covered in red or green chili sauce and plenty of cheese, bake in the oven until the cheese melts. They are also known as choking burritos.

A cast iron frying pan filled with cheap goodness, a rich red sauce, and an attractive baked-in flavor that can only be obtained from the oven.

What ingredients do you need for this Enchilada Style Ground Beef Burrito Recipe?

This recipe uses several ingredients to make the ground beef even more flavorful and take the sauce to the next level.

Ground beef stuffing

Ground beef: Main filling. Choose something a little fat so it stays flavorful. Taco seasonings: A great mix of chili powder, cumin, onion powder, garlic powder, salt and oregano. Add a classic and bold flavour that everyone loves. Better than beef bouillon: looking for a big boost with rich flavour. Dr. Pepper: My little secret, but it adds the best little hints of sweetness. Water: Helps everything cook well.

Butter: Start the sauce on a rich, smooth base. Flour: Thicken it so that it sticks to just the right burrito. Beef stock: Gives a deep and delicious flavor. Red Enchilada Sauce: Add spices and a little tang. Beef bouillon: Add even more beef flavour. Chili powder: A small kick with a warm little flavour.

Flour Tortilla (burrito size): Large enough to hold all the stuffing without falling apart. Mexican Cheese Blend: It melts perfectly and brings together all the flavors.

How to make this Enchilada Style Ground Beef Burrito Recipe

These burritos come together very quickly and really simmer to cook the ground beef, make the sauce, make the burrito and then bake. Ah, that’s not!

How to make a beef burrito

Brown: Cook the ground beef in a frying pan to drain the fat. Flavor: Add taco seasonings and more than bouillon. Boil: Mix the pepper and water. Cook until most of the liquid is gone.

Make a sauce

Melt: Heat the butter in a pan. Whisk: Add the flour and then slowly mix the beef stock, enchilada sauce and chili powder. Thick: Simmer until sauce is smooth and cover the spoon.

Assemble the burrito

Fill: Sprinkle with cheese and add 1/4 of the beef mixture to the center of each tortilla. Fold: Roll up the burrito and place in a safe plate in a baking dish or oven. Smoser: Pour sauce on top and add cheese. Bake: Cook until everything is hot and melted, then top and serve with your favorites!

What toppings do you put in this beef burrito recipe?

The great thing about Britos is that you can top them with anything that your family loves most. We usually want a scoop of sour cream big spoons and a fresh pico de gallo, but there are plenty of other tasty options too. Can I make this beef burrito recipe in advance?

Yes, you can absolutely make this easy beef burrito recipe in advance, and they are lifesavers on busy nights. To prepare, fill the burrito and fold it to assemble the burrito, place it in a baking dish, and wrap the dish in plastic wrap. Store in the fridge for up to 2 days. When ready to eat, wrap, pour sauce over top, sprinkle with cheese and bake at 375°F for about 25-30 minutes until hot and bubbly.

For longer storage, freeze burritos (no sauce) wrapped in freezer-safe airtight containers and freeze individually in aluminum foil for up to 3 months. When ready to use, thaw in the fridge overnight, suffocate in sauce and cheese, and bake as directed. If you are baking straight from the freeze, cover with foil and bake at 350°F for about 45 minutes, bake for another 10-15 minutes until everything is warm and the cheese melts.

What do you eat with this ground beef burrito recipe?

These burritos are large and packed so you may not need any sides at all. But if your family is like me, they probably want a side or two to close out the meal. Some of our favorites to serve together include rifle beans, Spanish rice, Mexican street corn erotica, black beans and cilantro lime lime. Each pairs perfectly with the bold flavour of the beef burrito, adding something a little extra to the plate.

How to reheat this beef burrito recipe

I prefer to reheat these ground beef burritos in the oven. Simply pop at 350°F for about 15-20 minutes and it will warm you up completely with a slightly crispy tortilla. If you are in a hurry, there is a microwave, but I don’t recommend it. Tortillas tend to get soaked, and it’s difficult to heat the filling evenly. The oven really gives you the best texture and flavor.
