Cheap taco spasta is the ultimate weekday comfort and comfort food. Hearty, cheap and ready in just 30 minutes.
This easy taco spasta casserole combines lots of tender pasta, seasoned taco meat, black beans, corn, and melt-in-the-melt cheese for a family dinner perfect for a busy night.
It’s also the best way to run out of remaining taco meat from the tacos on Tuesday, turning it into one-pot pasta bake, everyone’s favorite.

I don’t know how many times I made this taco casserole. If you’re like me and are totally obsessed with tacos, you might already have some taco meat left in the fridge.
Batches of taco meat are almost always included when preparing weekly meals. Sprinkle the lean beef brown with onion and taco seasonings. I have some in the fridge for the week, but I’ll freeze some of them next week too.

Ingredients for tacospasta casserole
You probably have all the ingredients now in your pantry or freezer.

pasta
Dried pasta. 1 pound box. You can use Rigatoni just like I do. But in this recipe, pasta works. This simple pasta dish can be made with elbow macaroni, lasagna noodles, pasta shells, or spaghetti. You can become wild here. Alternatively, instead of the pasta in this recipe, you can use gluten-free pasta, cooked rice, or spaghetti squash.
Taco meat (use the rest of the taco meat if you have it)
Beef or chicken. 1 pound of lean ground beef or diced chicken. You can also use turkey to make taco meat. White onions. ½ medium onion, cut into finely chopped pieces. Taco seasoning mix. 1 tablespoon of taco seasoning. Make a blend of homemade taco seasonings.
Mix in
Rotel Tomatoes. 1-10 oz CAN. Red enchilada sauce. 1-19 oz CAN. Black beans. 1-15 oz can, drain. Cone kernel. 2 cups of fresh corn cobs or 1 cup frozen
Cheese and toppings
Cheese: 16 oz shredded Colby Jack cheese, cheddar cheese or Mexican cheese blend.
Green onion. ½ bunch of green onions were chopped with a thin sour cream. Guacamole Pico de Garo – Fresh salsa is great in this recipe.
Necessary kitchen equipment
9 x 13 breads. Or something that is comparable to bake pasta casserole. Big bowl. Mix the ingredients in a large bowl, then transfer to a casserole dish and bake. Top plate. I placed a 9 x 13 pot on a baking sheet to catch the melted cheese and the bubbly sauce.
How to make tacospasta casserole
Preheat the oven to 400°C. Bring the pasta to a boil. Cook the pasta according to the instructions. I usually use a few and make sure it is very al dente. Drain the pasta and add to a large bowl. Brown the taco meat in a large skillet with onion and taco seasoning blend. (If you have it, use the rest of the taco meat) Rotel Tomatoes. Add ⅓ of rotel tomatoes to the bottom of 9 x 13 bread. Reserve the rest to add to the pasta. Mix the ingredients. Get a big bowl. Add cooked pasta, brown taco meat, beans, corn, enchilada sauce, rotel tomato leftovers and half of the cheese. Combine and throw. assemble. Add the pasta mixture to the 9 x 13 bread. Top with the remaining cheese. bake. Bake until the cheese melts. Approximately 15-20 minutes. serve. Top with sliced green onions and newly chopped cilantro. Add your favorite toppings.

1 box pasta, 1 lb ground beef, 15 oz black beans, 1 cup of corn kernel, 16 oz cheese
Rotel Tomatoes. To the bottom of the 9×13 bread, add 1/3 of the llotel tomato. Add the rest to the pasta.
10 oz rotel tomato
Enchilada sauce. Add the enchilada sauce to the pasta. Combine and throw.
19 oz red enchilada sauce
assemble. Add the pasta mixture to the 9 x 13 bread. Top with the remaining cheese.
bake. Bake until the cheese melts. Approximately 15-20 minutes.
serve. Top with sliced green onions and freshly chopped coriander. Add your favorite toppings.
A bunch of fresh coriander, ½ Bunch Green Onion, 1-2 avocado, sour cream, Guacamole, Pico de Garo
This recipe is very fast and easy when the meat is pre-cooked. I like to brown brown beef and onions in the fridge in advance.
For corn: Or drain a cup or can of frozen corn.
For Taco Meat: Alternatively, you can use diced or shredded chicken with taco seasonings.
