Greek Yogurt Bread – No-East Quick Quick High Protein Bread

I have recently tried some quick bread and this Greek yogurt bread quickly became a favorite in my kitchen. It’s the kind of recipe I turn to when I want homemade, cozy, fresh from the oven, without waiting for the yeast bread to need. There’s no time to get flashy steps or long promotions. Just mix, bake, enjoy.

My favorite is texture. Thanks to the yogurt and eggs, the bread is soft and tender, and bake in just the right amount of tongue. It slices beautifully, making it perfect for toast, sandwiches or tearing pieces while still warm. And since it is made with Greek yogurt and eggs, this is actually a high protein bread, which makes it even more satisfyingly nourishing.

I sometimes sprinkle a handful of seeds on top for a crunch, but honestly, it’s also a tasty plain. In my house, it rarely lasts more than a day or two, and I eat it in soup, spread it with butter and jam, or topped with a bit of cheese.

How to make Greek yogurt bread

Start by preheating the oven to 350°F (175°C). Lightly apply 9 x 5 inch (23 x 13 cm) bread and arrange the parchment.

In a large mixing bowl, whisk together the flour, baking powder and salt. Add yogurt, eggs and olive oil. Use a hand mixer to mix until smooth.

Transfer the batter to the prepared bread and smooth the top. For extra flavor and crunch, the top can be lightly brushed with olive oil and sprinkled with a pinch of salt and seeds.

Bake for 40-45 minutes until the bread is golden and the toothpick inserted in the center is clean. Let the bread cool in the bread for 5 minutes and transfer it to a wire rack before slicing to finish cooling.

3 cup (375g) All-purpose flour3 Small spoons (12g) Baking powder3/4 Small spoons (4g) Salt1½ cup (360g) Plain Greek Yogurt2 Big egg2 TBSP (30 ml) Olive oil1/2 cup (50g) Mixed seeds (Sunflower, sesame, pumpkin seeds) ,option

Instructions

Preheat the oven to 350°F (180°C). Lightly apply 9 x 5 inch (23 x 13 cm) bread and arrange the parchment.

In a large bowl, whisk the flour, baking powder and salt.

Add Greek yogurt, eggs and olive oil.

Use a hand mixer and mix well until smooth.

Spread the dough in the prepared pan and smooth the top.

Pour some olive oil and sprinkle with salt and seeds on top.

I used a mix of pumpkin, sunflower and sesame seeds. This step is optional.

Bake for 40-45 minutes until golden and toothpick are clean.

Cool in a pan for 5 minutes and transfer to a wire rack.
