What are Millionaire Toffee Chocolate Chunk Cookies?

Millionaire Cookies are inspired by the classic Millionaire Shortbread, known for its butter base, caramel sweetness, and chocolate topping. Here, those flavors are translated into special yet comforting bakery-style cookies.

Ingredients needed to make decadent cookies

Although these cookies taste indulgent, the ingredient list is surprisingly simple. The key is to use high quality chocolate and toffee for maximum flavor.

Unsalted butter Granulated sugar Light brown sugar Large eggs Vanilla extract All-purpose flour Baking powder Baking soda Salt Chocolate chunks or chopped chocolate bars Toffee bits or chopped toffee candies Flaked sea salt, optional but highly recommended Edible gold leaf, optional for decoration

How to make thick levain-style cookies at home

Making thick, bakery-style cookies requires a lot of technique. These small details make a big difference in the end result.

To keep the cookies soft, mix until the dough comes together. Overmixing can result in tough, dry cookies. That’s not what we want you to do. This is not a recipe that involves adding air or making the sugar fluffy. Just mix until just combined and you’ll be left with soft, buttery cookies. Use a large amount of dough to make large, hearty cookies. I’m not messing around with these cookies. This is a thick levain style cookie that has a beautiful doughy gooey texture. They may look big when you’re shaping them (and they are), but that’s how the recipe intends them to bake. If you prefer smaller cookies, you can make them smaller, but you won’t get quite the same effect if the area is smaller. To get a soft, sticky texture, cook the center a little less. The cookies will look set around the edges, but should still be very soft in the middle when removed from the oven. It will solidify even more as it cools!

How to store and freeze this decadent cookie

These cookies freeze like a dream, so you can meal prep and have cookies whenever you want. Here are some tips on how to preserve and freeze!

Storing freshly baked cookies: Store freshly baked cookies at room temperature for up to 3 days or in the refrigerator for up to 6 days. I think it tastes great even when it’s cold, so I often chill it in the fridge! Either way, store it in an airtight container for maximum freshness. Freeze freshly baked cookies: Freshly baked cookies can be frozen for up to 3 months. Once the cookies are completely cool, place them in a freezer bag or container and freeze. Be sure to thaw or heat in the oven before eating. Freeze cookie dough: If you want the taste of freshly baked cookies, you can also freeze cookie dough balls. Make the recipe according to the instructions, but freeze the formed dough balls in a freezer-safe bag or container for up to 2 months. When baking, let the dough sit on the counter for an hour before baking to ensure the cookies are soft enough and spread properly.

1 cup unsalted buttercool and cut into cubes
3/4 cup packed light brown sugar
1/2 cup granulated sugar
2 A large egg, cold from the refrigerator
2 teaspoons vanilla essence
2 3/4 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon baking soda
1 teaspoon salt
4 ounce semi-sweet chocolatecoarsely chopped
1/2 cup semi-sweet chocolate chips
1/2 cup toffee piecesFood safe edible gold leaf, optional

Instructions

In a standing mixer fitted with the paddle attachment, mix butter and sugar until just beginning to form a single clump, about 1 minute. It will still be lumpy, but this is what you want. Reduce speed to medium-low and add eggs and vanilla and mix until combined. Add flour, baking powder, baking soda, and salt. Mix on low speed until combined and no streaks of flour remain. The dough will become thicker. Add chocolate and toffee pieces and mix to distribute evenly. Do not overmix 1 Divide the dough into 12 equal parts. Shape the dough into a rough ball, but don’t roll it or pack it too tightly. Place on a baking sheet lined with parchment paper, 2 inches apart. Cover the baking sheet and place in the freezer for 30 minutes or in the refrigerator for up to 12 hours before baking. Preheat oven to 375°F. Bake cookies at 375°F for 5 minutes. Reduce the oven temperature to 350°F and bake for an additional 8 to 10 minutes, or until the cookies are golden brown all over and the edges are set but still very soft in the middle. If in doubt, take out the cookies early. The cookies will continue to cook even when they cool. Nothing ruins them more than overcooking them. I can’t stress this enough! Transfer to a wire rack to cool completely. Once the cookies have cooled, use tweezers or dry fingers to carefully create a gold leaf and place the gold leaf on top of each cookie. Sprinkle with flaky salt and enjoy!
