These Oatmeal Carrot Cake Muffins are one of those comforting baked goods that I keep coming back to. Naturally sweetened and contains no refined sugar. It’s moist and packed with the comforting flavors of grated carrots and freshly ground oats. I love how the oat flour gives it a soft and comforting texture.

The dough comes together easily, making it perfect for relaxing weekend baking or a quick weekday snack. The walnuts on top are lightly toasted while baking, adding just the right amount of crunch to balance the softness inside.

But what really makes these muffins special is the simple Greek yogurt and honey icing finish. It’s creamy, lightly tart, and sweet enough to complement the muffin’s warm spices and natural sweetness without overpowering it.

This is a dish that can be enjoyed for breakfast, snack time, or even as a dessert. To be honest, it won’t last long in my kitchen, and I feel like it won’t last long in your kitchen either.

Oatmeal Carrot Cake Muffins with Greek Yogurt Icing

How to make oatmeal carrot cake muffins

First, preheat the oven to 370°F (190°C) and line a 12-cavity muffin tin with paper liners or silicone cups. Lately, I’ve been using silicone muffin cups that don’t hold muffins.

Combine eggs and honey or maple syrup in a mixing bowl and mix until well combined. Add vegetable oil, vanilla extract, and yogurt and mix until smooth and creamy. If you want to omit the oil, you can use unsweetened applesauce instead.

Add oat flour, cinnamon, nutmeg, baking soda, baking powder, and salt and mix until thoroughly combined. Gently add the finely grated carrots, making sure to distribute them evenly throughout the dough.

Divide the batter evenly between the prepared muffin cups and sprinkle the chopped walnuts on top for a little crunch.

Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.

Remove from the oven and wait until the muffins are completely cool before adding the frosting.

How to make greek yogurt icing

In a small bowl, mix together the Greek yogurt, honey, and cinnamon until smooth and creamy.

Spread the frosting over the cooled muffins and sprinkle lightly with cinnamon.

Enjoy soft, warm, spiced muffins with light and creamy toppings. Perfect for breakfast or a healthy snack.

3 egg1/3 cup (120g) Honey/Maple Syrup1/4 cup (60g) vegetable oil or unsweetened applesauce1 teaspoon Vanilla essence (5g)1/3 cup Greek yogurt (80g)1 3/4 cup Oat flour (180g)2 1/4 teaspoon Baking powder (10g)3/4 teaspoon Baking soda (4g)1 1/2 teaspoon Cinnamon (5g)1/4 teaspoon Nutmeg (1g)1/2 teaspoon salt (3g)9 ounce Finely grated carrot (250g) 3 medium carrotswalnut chopped, for topping

1 1/2 cup (360g) 10% Greek yogurt3 tablespoon Honey (60g)1/4 teaspoon Cinnamon (1g)pinch of salt1 teaspoon Vanilla essence (5g)

Instructions

Prepare the Greek yogurt icing.

In a separate mixing bowl, combine Greek yogurt, honey, salt, vanilla extract, and cinnamon. Mix until smooth and creamy.

Once the muffins have cooled, spread the Greek yogurt frosting evenly over the muffins.

Garnish with cinnamon powder.
