Food coloring in this recipe is completely optional. I didn’t use it because it would make the fudge more pink. Instead of crushing candy canes, you can buy bags of crushed peppermints at the store. This makes this much easier and is usually available during the holiday season.

peppermint fudge
This peppermint fudge is perfect for Christmas entertaining. Really delicious with only 5 ingredients!
Line an 8-inch square plate with aluminum foil. Grease the foil with butter or margarine. Combine potato chips and milk in a saucepan and heat over medium heat, stirring frequently to prevent burning. Once melted, remove from heat and stir in crushed candy cane and extract.
Pour into an 8×8 dish. If you use food coloring, you can add it along with the candy cane, but I find that it turns the fudge pink. It was like dipping a toothpick in food coloring and stirring it into the candy in the dish. Place in the refrigerator for about 1 1/2 hours, or until the fudge is firm and can be cut with a knife. Makes about 24 pieces.
You can also buy 8-ounce bags of crushed peppermint during the holiday season to make it even easier.
