Queso Chicken Recipe
It’s ready in just 60 minutes, so most cooking time is hand-off and this queso chicken recipe makes for the perfect low-effort meal. Plus, there’s only one baking dish, so cleanup is easy!

Main ingredients and alternatives
The main ingredients needed to make queso chicken and rice are: Check the recipe cards below for the complete list.
Chicken – I use boneless skinless chicken breast in this chicken recipe, but boneless skinless chicken thighs work well. Be sure to thaw the chicken before baking. ROTEL – Fresh cut tomatoes and green chili are great alternatives. Velveeta – If you have it, you can replace it with the remaining queso dip. I used smoked queso dip, llotel dip, green chiliqueso and Mexican cheese dip with success. Seasonings – Instead of the custom mix of spices used to season the chicken, you can use 1-2-2-2-2-2-2-2-2-2-2-2-2-2-2-2-2-2-2-2-2-2-2-2-2-2-2-2-2-2-2-2-2-2-2-2-2-2-2-2-2-2-2-2-2-2-2-2-2- Black Beans – Pinto beans can be used or omitted entirely. Cooked Rice – All kinds of cooked rice work. I love using the rest of the Mexican rice, Mexican green rice and cilantro lime lime. Optional Garnish – Fresh coriander, avocado slices, salsa and/or lime wedges.

Chicken conqueso variation
Stretch your dollars: Add up to 4 cups of rice to further stretch your meals.
Cream Cheese: You can add a block of cream cheese (cube) to make a more creamy dish.
Vegetables: Canned corn (drainage), diced onions, or peppers can be added to add flavor and nutrition.

Store remaining chicken in the fridge along with the queso for up to 3 days. Reheat in the oven in 350°F or microwave until heated.

Instructions
Preheat the oven to 400°F.
Grease a 9×13 baking dish. Add the cubic berbeta, llotel, black beans and cooked rice and mix.
In a small mixing bowl, mix cumin, garlic powder, onion powder, chili powder and salt. Sprinkle the seasoning mix evenly on each side of the chicken and place it on top of the berbeta mixture.
Cover the baking dish with foil and bake for 45 minutes. Remove the foil and bake for another 5-10 minutes or until the chicken is 165°F.
Transfer the cooked chicken to a serving plate. Using a large spoon, stir the quesolase mixture until it is completely combined. Scoop the queso rice over the chicken and garnish with coriander. Serve immediately for the best texture.
