Rustic Romanian potatoes with paprika and onions are one of those dishes that instantly feels homey. It’s made with simple ingredients and doesn’t require much effort, but it’s full of flavor. This is the kind of food that was always on the table when there was no time and everyone was hungry. It’s warm, comfortable, and very satisfying.

I always boil potatoes from the skin. That’s how I learned how to make it, and it really makes a difference. The potatoes are firm, flavorful, and never watery. When sliced, it absorbs the beautiful onion and paprika-infused oil without falling apart. Onions are slowly cooked until soft and golden, red bell pepper adds sweetness, and paprika is carefully added at just the right time to bloom and develop its unique color and aroma.

It always amazes me a little how such simple ingredients in the pantry can create something so satisfying. These potatoes don’t need to shine. Sprinkle with fresh parsley and serve with fried eggs, roasted sausage, or pickles.

There’s nothing complicated here, just quality ingredients and cooking the right way. It’s relaxed and approachable, perfect for any day of the week.

How to make Romanian rustic potatoes

Start by boiling the potatoes with their skins on. Rub them well without peeling them, put them in a saucepan and pour cold salted water. Bring to a boil and cook for 20 to 25 minutes, until tender when pierced, but not mushy. Drain the water and let it cool slightly.

Peel the skin while still warm (it should peel easily) and cut the potatoes into thick slices or large rustic chunks.

Heat plenty of oil in a wide pot. Add onions and cook over medium heat until soft, glossy, and lightly golden. Add red bell pepper and cook until softened, 2 to 3 minutes.

Lower the heat, add the paprika, and stir briefly for a few seconds to ensure it blooms without burning. Add the sliced ​​potatoes and salt, mix everything gently and coat with paprika oil. Cook, turning carefully, until some edges are lightly crispy, 5 to 8 minutes.

Taste and adjust the salt, remove from heat, sprinkle generously with chopped parsley, and serve.

Instructions
