
Welcome to the weekend! It’s getting even colder here in Ohio and I’m getting really cold here. It started snowing around noon and is expected to continue snowing into tomorrow. Do I need to tell you how excited I am about this? We should get 3-6 inches of snow, but for us here in central Ohio, that’s a lot of snow.
I’m going to start simmering the tomato soup on the stove. Tonight I’m going to dip the best grilled cheese sandwich ever into it. My son Ben requested clam chowder for dinner tomorrow, so I’m looking forward to that too. I’m thinking that I might also need some biscuits with cheese.
About this week’s blog: Sometimes the simplest things are the biggest wins. That’s my impression of this Cheesy and Crunchy Chicken Bacon Ranch Quesadilla. My sons and I made them together for the first time a few weeks ago using some of the items we tend to have in our freezer. Suffice to say these taste much better than they should.

This delicious Chocolate Sea Salt Ice Cream is the perfect indulgence to whisper at the end of a long day. I don’t know what it is about sea salt ice cream that hooks me, but I’m hooked and there’s no going back.
What I’m craving: This Christmas salad caught my eye this week with fresh vegetables, tangerines, pomegranate, candied pecans, and crumbled feta tossed with a tangy citrus vinaigrette. Not only is it beautiful, it looks really delicious!
My favorite thing this week is definitely earphones. It’s in my ears as I write today’s newsletter, and I’m also streaming my favorite Christmas music. Once mentioned, I’ve mentioned it countless times and it’s still half price. i love them!
Song I’m listening to: “Forever Christmas” by David Lantz and Kristin Amalie. I came across this album a few years ago and it quickly became a new holiday tradition for me. The music is beautiful in every way. David is a pianist and composer, and Christine is a vocalist with a breathtaking voice.
“O Holy Night” and “Silent Night” are long-time favorites of mine and the rendition is perfect, but “Forever Christmas” is just as great. You can stream this album almost anywhere, so be sure to check it out. I’m curious as to what will be your favorite.
