Welcome to the weekend, my friends! Today I’m away from me, I’m just sitting and writing this and eating a huge taco salad for dinner. My family is all about themselves, and it’s a peaceful night at home for me.
The sun shines all day here, giving the illusion that it is a much warmer outdoors than it actually is. Like most countries this week, our temperatures are everywhere, with teens and snow flying one day, following close to 70 people. I absolutely love it. The weather can be a lot of fun! ←He said no one lived in Phoenix.
In the kitchen this week: It’s corned beef season here and I’m very prepared. First, we have slow cooker corn beef (please give us the largest roast you can find in-store).
Do you like reuben sandwiches? If so, you might get hooked on these corned beef sliders – my family certainly did!
Creamy Ruben Soup takes all the Reuben flavors you love and combine them with steamed hot soups, making it perfect for these chilly nights.
And if you still have enough caked beef left, crispy hot potatoes and cabbage will be combined with a tender, salty corn beef bite to make the corned beef and cabbage hash of your dreams.
Ever since I first made it, I have been craving this calicin cauliflower. The spice blend brings a hot kiss to this delicious, slightly crunchy side dish.
The rave reviews of these universe brownies were not my friend. I made more time than I could count now and found out that these brownies are my kryptonite. I can’t leave them so I have to force them to give them half of the brownies every time I make them.
Ah, my friends, these blueberry lemon bars have become even more amazing than I had hoped! A bite of a tangy lemon bar has sweet bursts of blueberries, and I crave every time I have both lemons and blueberries in my house.
My favorite of the week is my new pill organizer. (Imagine going ahead and smacking your face here.) It’s not cool or flashy to share, but seriously, this is so useful! I’ve bumped into a stage in my life where taking vitamins actually makes a difference in my feelings, but I’m not a huge fan of opening different bottles every day.
So enter this nifty little weekly organizer. I fill it up on the weekend and it lives at my bathroom counter. Every morning, after brushing your teeth, you can grab some of the vitamins of the day. It makes a huge difference to remember to take them when everything is already sorted out by day! (There are thrilling peeps in my everyday life, friends. Are you happy to share everything?)
What I’m listening to: All my days by Ellie Holcomb. There’s no word even about how much I love this album right now. This is a small album of poem sal and is incredible. Want a sneak peak? Check out my daily title song on YouTube.
“My lips praise you, because your immobility is superior to life.” Psalm 63:3 ESV
Wishing you a beautiful week filled with little things that will make you smile!
