
Welcome to the weekend, my friends! Are you enjoying the cool autumn weather as we do? My brother is in town and I look forward to lots of laughs, good food and some board games. The weather should be better on weekends, so I hope to go outside as much as possible on a cool morning.
In this week’s blog, I’m going to make my family’s favorite Carne en su Jugo (aka meat), which is a bit of a favorite.
When my family says they love this, what I really mean is that we love this meal. My eldest son has requested Carne en su Jugo for his birthday dinner for the past five years.
This canvar-prone seat punch chicken dinner has become a favorite in many homes over the past two years. And my family continues to make it at least once a month. It takes about five minutes tossed chicken, potatoes and green beans with simple lemon and herb vinaigrette before they become tender and crisp.
Honey Glass Carrots are a welcome side dish that combines the natural sweetness of carrots with the light buttery honey glaze. This recipe can be made in just 10 minutes, in about the same amount of time it takes to steam vegetables. And while I enjoy so many steamed vegetables, the incredible factor in this glazed carrot recipe is the more steps.
Crispy Kayjun cauliflower brings a hot kiss to this delicious, slightly crunchy side dish. Cauliflower is a wonderfully blank slate when it comes to playing with a variety of flavors. This makes the perfect canvas for roasting and adding seasonings.

The creamy sweet vanilla ice cream with a hint of fruity olive oil on the back is an unexpected adult flavored snack. I absolutely loved this olive oil ice cream served with fresh berry dishes and two of my kids enjoyed it and surprised me.
What I’m craving: Phosphorus Lemon Olive Oil Cake! It is moist, tender and bursting with fresh lemon flavor. (It’s a pure dessert heaven, and there’s also that olive oil ice cream scoop!) When she was here last time I had to call a friend and hand over the last half of the cake.
What I’m Reading: Abraham Verghese’s Water Contract. I’ve taken this to about 2/3 and break the self-imposed rule of not recommending books that I haven’t finished reading. This is slow, but interesting, but read for me. I’ve admitted in the past that Oprah’s recommendations are more likely to put off me than persuade me to read, but this time I’m not disappointed.
I don’t even remember who recommended this book to me, but I’m grateful for it. It’s a very different kind of reading material for me and it’s likely to be a book that my sister enjoys more than one for me, but that’s a good thing! (I’m laughing now, thinking that Jenny recommended it in the first place.) Next week I’ll update my final thoughts on this.
What I’m listening to: Walk on Ben Fuller’s Fire. I absolutely love this album. I heard his song “Walk With Me” a few weeks ago and quickly added it to my playlist. I found the entire album to be just as good.
