Taco Casserole is a fiesta on a baking dish! There’s so much to love with the deliciously seasoned taco meat, crispy doritos and melted cheese layers. Decorate this TexMex casserole with sour cream, guacamole, lettuce and tomatoes, just like real tacos.

Today’s Taco Casserole has a layer of dorito crunch and flavoured taco meat mixed with a melted cheese blend of vegetables, corn, beans and gooey. It’s on the table in under an hour and is a very fun way to put a fresh spin on a taco night!
What makes this the best taco casserole recipe
Delight the crowd. I love this casserole stuffs all the flavors of the taco into a 9×13 inch baking dish. Cooked tacos for crowds are much easier. Great choice for party and game day menus. Simple ingredients. A casserole that was always a hit with juicy ground beef, tender vegetables, delicious spices, crunchy Doritos and melted cheese, with a constant hit with every taco night.

Necessary materials
No flashy ingredients are needed to load this evening’s casserole with a delicious Mexican flavor. I’ve included a note about what’s in this recipe below. After the article, scroll down to the recipe card in the printable list of amounts.
Ground beef – I like to use lean ground beef, but you can also make this casserole with chicken, turkey, or sausages, such as chorizo. Onion and peppers – diced yellow onions and chili peppers of the colour you want (I use red). Garlic – You can replace freshly chopped or each clove with 1 teaspoon to 1/2 teaspoon garlic powder. Taco Seasonings – Choose taco seasonings you purchased from your favorite store, like the old El Paso. Corn and Black Beans – If you are using canned food and corn, drain and rinse beforehand. If necessary, you can replace black beans with another type, such as focus or green beans. Rotel Tomatoes – Rotel contains diced peppers. If necessary, substitute canned tomatoes and add mild or hot diced green chili peppers to taste. Shredded Cheese – I like to use half cheddar and half Monterey Jack cheese, but shredded double cheeses, like Colby Jack, Pepper Jack, and Asiango, all work. Doritos – The flavour, or corn chips, are lightly crushed (squeeze the bag a few times and crush it a little). Toppings – Lettuce, onions, sour cream, avocado, green onions, or your favorite tapotops. For more detailed suggestions, see the post details.
How to make taco casserole
Let’s run this casserole. It’s quick and easy, and practical preparation for about 5 minutes. After that, the oven will remain! You can find an overview of the steps here and a complete printable recipe for recipe cards.


Brown beef and vegetables. First, add ground beef to the frying pan, brown the meat over medium heat, and break the meat as you cook it. Add onions, peppers and garlic and want the beef to turn half brown. Cook the meat until the meat is completely browned and the vegetables are tender. Add the remaining ingredients. Stir in taco seasonings, black beans, corn and llotel, followed by about half the fine cheese.


Assemble the casserole. Spread approximately 2 cups of Doritos on the bottom of a 9 x 13 inch baking dish. This is supplemented with a uniform taco meat, then another layer of Doritos. Finally, sprinkle some fine cheese on it. Bake.

Recipe Tips
Leave the Doritos in a large chunk. Doritos should not be crushed too finely. You need chunks in the casserole that don’t become too soft. Various flavors. In this taco casserole, we love Dorito’s nacho cheese flavored chips, but you can play with other flavors like cool ranch and spicy. If the brown top of the casserole is too fast, cover the baking dish loosely with foil while baking is finished.

Storage and reheat leftovers
Refrigerated. Place the Taco Casserole in an airtight container in the fridge. Doritos softens over time, so it is recommended to enjoy leftovers within 2-3 days. Reheat. I like to warm the casserole in a 350ºF oven and sprinkle with fresh crushed Doritos to revive the texture. Freeze. Freeze the casserole airtightness for up to 2 months. Thaw in the fridge before reheating.

1 Poundry Ground Beef
1 cup Yellow onion, diced
1/2 cup Red peppers, diced
2 Garlic, chopped
1 Packaged taco seasonings
1 A 15-ounce can of black beans that were drained and rinsed
1 15oz corn can, drainage
1 10 oz can can can tomatoes with diced chili peppers
2 cups Shredded cheese (I used half cheddar/half monterey jack), split
3 cups Doritos, suggestions for lightly crushed toppings: lettuce, tomato, sour cream, green onions
Preheat the oven to 350ºF. Add the ground beef to a large frying pan over medium heat. Break the beef apart and cook until about half brown. Add diced onions, peppers and garlic to the ground beef and continue cooking until the beef is completely browned and the vegetables are tender. Sprinkle taco seasonings over the meat mixture and stir well. Cook for 1-2 minutes, stirring constantly. Add the black beans, corn and rotel to the frying pan and stir well. Next, stir in half the shredded cheese. Place approximately 2 cups worth of broken Doritos at the bottom of a 9×13 baking dish. Spoon the meat mixture into a uniform layer on top of Doritos. Top with the remaining Doritos and shredded cheese. Bake in a preheated oven for about 15 minutes or until the cheese has melted and the chips are toasted on top. Add your favorite tapo pickles.
