Many of my recipes seem to be inspired by travel. And this was no exception. My sisters and I recently visited Santa Fe, New Mexico, and during our visit we found a place that served chocolate sea salt ice cream like this one. For me, it was love at first sight.
My sister didn’t really like sea salt ice cream, but I would have happily added more salt. When I got home, I knew I had to make that ice cream again. I am now happy to report that both were successful.
In fact, I love salted ice cream so much that I’ve recently started sprinkling salt on almost every spoonful of ice cream. If you think sea salt and chocolate is an unusual combination, we would like to introduce it to you!
Sea salt chocolate is one of my favorite combinations of salty and sweet. I always sprinkle Maldon sea salt flakes on desserts like chocolate chip pudding cookies. It takes them from really good to really brilliant.

Get out your big spoon because this homemade salted caramel ice cream is rich, frosty perfection. Combine cream, cocoa, sugar, and salt in a large saucepan. Whisk to combine, set over medium heat, and continue stirring until it begins to steam and boil. You can increase the heat if necessary, but don’t stop and keep stirring. Do not leave at this point.
Remove from heat and immediately add chocolate chips. Whisk until the chocolate is completely melted. Stir in milk, vanilla, and salt. Chill until completely chilled, at least 4 hours or overnight, then refrigerate.
