These porcupine meatballs are a family favorite and we’re pretty sure the secret ingredient is the tomato soup. It just adds great flavor.

Swaps and Additions to These Porcupine Meatballs

You can easily replace ground beef with ground turkey or ground chicken. You can also use regular rice instead of instant rice, but you need to cook the rice first and use it for the meatballs. You can also add your family’s favorite seasonings, like basil or oregano. We love this recipe and have enjoyed it for many years. I love eating them over pasta or rice, or as meatballs with salads or baked potatoes. These also make great meatball subs, added to sub rolls and topped with cheese.

Now, if you look at many recipes for porcupine meatballs, they only use tomato sauce, but we strongly believe that you can make this dish with tomato soup. This easy dish always gets compliments just because it gives the sauce a nice creamy flavor.

Old-fashioned porcupine meatballs

These old-fashioned porcupine meatballs are made with ground beef, rice, and rich tomato sauce. A classic comfort food recipe that’s easy to make, flavorful, and budget-friendly.

1 lb Ground beef1/2 cup instant quick cooked rice uncooked1/3 cup chopped onion1/2 teaspoon salt1/4 teaspoon black pepper1/2 teaspoon garlic powder2 egg2 teaspoon Worcestershire sauce2 tablespoon cooking oil

sauce ingredients

1 10.5 ounce can tomato soup (do not dilute)1 8 oz can tomato sauce3/4 cup water

Combine all ingredients except cooking oil in a large bowl.

Mix with a spoon to form meatballs about the size of golf balls. Just use your hands to make meatballs. You can make it a little smaller if you want. Makes 12 meatballs from 1 pound of hamburgers.

Add oil to a frying pan and brown the meatballs. Remove meatballs and drain. Return the meatballs to the skillet and cover with the sauce below.

Sprinkle with dried parsley before serving. You can also add other spices like oregano, basil, etc. to the recipe, but as mentioned above my family likes them. If you use regular rice for meatballs instead of instant, cook the rice first.
