Old-fashioned porcupine meatballs
These old-fashioned porcupine meatballs are made with ground beef, rice, and rich tomato sauce. A classic comfort food recipe that’s easy to make, flavorful, and budget-friendly.
sauce ingredients
1 10.5 ounce can tomato soup (do not dilute)1 8 oz can tomato sauce3/4 cup water
Combine all ingredients except cooking oil in a large bowl.
Mix with a spoon to form meatballs about the size of golf balls. Just use your hands to make meatballs. You can make it a little smaller if you want. Makes 12 meatballs from 1 pound of hamburgers.
Add oil to a frying pan and brown the meatballs. Remove meatballs and drain. Return the meatballs to the skillet and cover with the sauce below.
Sprinkle with dried parsley before serving. You can also add other spices like oregano, basil, etc. to the recipe, but as mentioned above my family likes them. If you use regular rice for meatballs instead of instant, cook the rice first.
