This Mediterranean lentil salad is one of those simple dishes that tastes like sunshine in a bowl. It starts with the humble canned lentils, but when you wash them and mix them with fresh vegetables, everything changes and they become light, fresh, and lively.
I love how quick this comes together, especially on busy days when I want something healthy and satisfying. Crisp cucumbers, juicy tomatoes, and a little finely chopped red onion provide crunch and brightness, while fresh parsley (and mint if you have it) really livens up the whole salad.
The dressing is my favorite. Good quality olive oil, fresh lemon juice, a little garlic, honey, mustard, and a little salt and pepper. It’s simple, but it brings everything together in the most beautiful way.
I love adding feta cheese and olives. Adding it makes it even more Mediterranean and a little more luxurious.
What I really like about this salad is that it tastes better the longer it sits. After 20-30 minutes, the lentils will absorb the dressing and each bite will have more flavor. It’s the type of dish that once you make it, you sneak it home from the fridge. It’s fresh, easy, and honestly really delicious food.
How to make lentil salad
First, pour the canned lentils into a fine-mesh colander and rinse under cold running water for about 20 to 30 seconds. Gently shake off excess water and drain well to avoid making the salad watery.

In a small bowl or jar, combine olive oil, lemon juice, apple cider vinegar, Dijon mustard, honey, minced garlic, salt, and pepper. Whisk until the dressing is well mixed and slightly emulsified.

In a large bowl, combine the drained lentils with the chopped onion, cucumber, red bell pepper, cherry tomatoes, and parsley.
Add the crumbled feta and olives and pour the dressing over the salad. Mix gently until everything is evenly coated and well mixed.
Let the salad sit for 15 to 20 minutes before serving to give the flavors time to meld and deepen.
Serve slightly chilled or at room temperature for a fresh, vibrant dish full of texture and brightness. Perfect for a light meal or as a colorful side dish that gets better the longer you let it sit.
