How to make chickpea patties

Grate the potatoes and squeeze out as much excess water as possible to prevent the patties from becoming soggy. Add the grated carrots as is.
In a large bowl, combine mashed chickpeas, grated vegetables, onion, garlic, eggs, and fresh herbs.
Add the breadcrumbs along with seasonings such as mustard, cumin, coriander, chili flakes, salt, and pepper. Mix until everything is combined and the mixture holds its shape but is still soft and not dry.
