These chickpea patties are the kind of meal I love to make on busy days when I want something homemade, nutritious, and flavorful without the hassle. Although we use simple ingredients, we end up with extremely satisfying patties that are crispy on the outside and soft on the inside.

I love adding grated carrots and potatoes to the mixture. This is because it gives the patty a great texture and prevents it from becoming dry. Garlic, onions, herbs, and some warm spices bring everything together and give your kitchen a wonderful aroma while cooking.

One of the things I appreciate most about these patties is that they are healthy and filling. Chickpeas are naturally rich in plant-based protein and fiber, making these patties a great vegetarian option while still feeling filling enough for a complete meal.

We usually enjoy it in a warm wrap with a simple yogurt-garlic sauce, a fresh salad, or some crunchy vegetables. Leftovers are also great for meal prep, as they’re just as delicious the next day.

Simple, healthy, budget-friendly, and family-friendly, this chickpea patty is the kind of recipe that easily fits into your everyday cooking.

How to make chickpea patties

Start by lightly mashing the chickpeas with a fork or potato masher, keeping some texture without turning them into a paste.

Grate the potatoes and squeeze out as much excess water as possible to prevent the patties from becoming soggy. Add the grated carrots as is.

In a large bowl, combine mashed chickpeas, grated vegetables, onion, garlic, eggs, and fresh herbs.

Add the breadcrumbs along with seasonings such as mustard, cumin, coriander, chili flakes, salt, and pepper. Mix until everything is combined and the mixture holds its shape but is still soft and not dry.

How to bake patties

Using a spoon or ice cream scoop, carefully drop some of the mixture into the pan. Use the back of a spoon or a spatula to gently flatten each mound. This allows for even cooking.

Fry in a little oil over medium heat for 3-4 minutes on each side until golden brown and crispy.

Once fully cooked, transfer the fritters to a plate lined with paper towels. This will absorb excess oil and give you a light and delicious result.

Alternatively, bake at 400°F (200°C) for 25 to 30 minutes, turning halfway through, until nicely browned on both sides.

Serve warm. Crispy on the outside and soft on the inside, they’re flavorful and hearty, making them perfect for light meals, snacks, or in wraps and salads.

1 can (14oz-400g) Chickpeas drain and dry well.1 small carrots (4 oz -120g) grated1 small potatoes (5 oz – 150g) grated3 green onion finely chopped3-4 clove garlic chopped1/4 cup Bread crumbs or oats (40g)2 medium egg2 tablespoon fresh parsley chopped1 teaspoon salt (5g)1/2 teaspoon black pepper1/2 teaspoon ground cuminA pinch of chili flakes1/2 teaspoon coriander1 teaspoon (5g) Dijon mustard
