How to make cherry tomato pasta
First, bring a large pot of salted water to a boil. Cook the pasta until al dente, reserving about 1 cup of the pasta cooking water, then drain.
Heat the olive oil in a wide saucepan over medium heat. Add the garlic and chili flakes and cook slowly for 30 to 60 seconds, being careful not to burn the garlic, until fragrant.
Add the cherry tomatoes, a pinch of salt, and freshly ground black pepper. Cook gently for a few minutes, then stir occasionally.
After about 5-8 minutes, the tomatoes will soften and begin to pop. Press lightly with a spoon to release the juice and create a thick, saucy consistency. Simmer the sauce until it thickens slightly.
Add the drained pasta directly to the pot. Pour in some of the reserved pasta cooking water and stir until the sauce is glossy and emulsified and each strand is coated.
Add Parmesan cheese and torn fresh basil and mix. Toss again until everything is well mixed.
