Make the dressing: Combine the dressing ingredients in a small dish and set aside. Make the salad: Combine all salad ingredients in a large bowl, add dressing and mix again. Pro tip: Cut everything into roughly the same size cubes so you get a little bit of everything in each bite. Marinate: Leave the salad in the refrigerator for at least 30 minutes for maximum flavor.

One of my favorite things about this chickpea salad is that it’s easy to customize with whatever you have in your fridge. It’s one of those recipes that somehow always tastes better if you just clean out your produce drawer.

Here’s an easy way to switch:

Add vegetables: Toss everything on top of arugula, spinach, and romaine lettuce for an even more luxurious salad.

Add protein: Add grilled chicken, shrimp, salmon, or even quinoa to make this salad more filling.

Swap the cheese: Try goat cheese, mozzarella pearls, or leave out the cheese entirely for a dairy-free version.

Add olives: Kalamata olives add a salty Mediterranean flavor.
