This classic apple wacky cake is moist, simple, and full of warm apple spice flavor. A vintage Great Depression-era favorite made without eggs, milk, or butter.

This cake is a delicious addition to your recipe box for several reasons. I made an apple version of an old-fashioned recipe that does not use eggs, milk, or butter. We always love quirky cakes, also known as recession-era cakes, and this is another winner. I added apples and used apple juice and it turned out great.

Why is it called a whimsical cake?

It is called a whimsical cake because it is made without eggs, milk, or butter. During the Great Depression, these things were hard to come by, so this cake was born. Since it is made with oil, many people are surprised at how this cake turns out.

How does it swell without eggs?

This recipe includes baking soda and vinegar, which makes this cake rise. As you can see from the photo, this cake rose without any problems. It was perfect and had a great texture. I will make this again and again.

Do fancy cakes freeze well?

Yes, this cake is easy to freeze. Wrap it tightly in plastic wrap and store it in a freezer-safe container and you’re ready to go. Since there is no frosting, this cake is also perfect for freezing.

Apple wacky cake (no eggs, milk, or butter)

This apple wacky cake is moist, simple, and full of warm apple spice flavor. A vintage Great Depression-era favorite made without eggs, milk, or butter.

1 1/2 cup all-purpose flour1 cup white granulated sugar1 teaspoon baking soda1/2 teaspoon salt2 teaspoon cinnamon powder1/2 teaspoon nutmeg1 cup apple juice 1 cup of water can be used1 tablespoon apple cider vinegar5 tablespoon olive oil You can use vegetables or canola1 1/2 teaspoon vanilla essence1 cup apple, peeled and shredded or chopped I used Gala. you can use whatever you like1/2 cup chopped walnuts You can use pecans

Combine flour, sugar, baking soda, salt, cinnamon, and nutmeg in a bowl.

Add apple juice, apple cider vinegar, olive oil, and vanilla extract. Stir with a spoon. Mix apples and nuts.

Spray an 8×8 or 9×9 baking dish with cooking spray and add the batter.

Bake in a preheated 350 degree oven for 40-45 minutes, until centers test done.

Let cool for 10-15 minutes. You can also sprinkle powdered sugar on top or frost with your favorite icing.

Depending on how you cut it, it will make about 9 pieces. I set the portion size to 4 pieces because most people probably eat 2 pieces.
