This bean and corn salsa is a recipe that makes you wonder how something as simple as this can taste so good. It’s colorful, fresh and full of flavour, just like summer in a bowl. A touch of sweet corn, hearty beans, juicy tomatoes, refreshing peppers, red onions and jalapeño combines in the perfect balance of crunch and creaminess. The lime squeeze and a handful of chopped coriander combine everything with a bright and enthusiastic finish.

What is one of the best things about this salsa? It pairs beautifully with almost any meal. Serve as a dip with tortilla chips and it will disappear quickly at the party. Served as a lively side dish with fish, chicken or steak for fresh and enthusiastic contrast, it creates a quick and satisfying lunch. Also, to enhance the simple flavor, spoon over tacos, baked potatoes, or grain bowls.

How to make bean and corn salsa

In a large bowl, whisk olive oil, lime juice, honey, ground cumin, salt and freshly ground black pepper until well mixed. Add the beans, corn, diced tomatoes, red peppers, garlic, red onion, jalapeno pepper, lime rind, and chopped cilantro or parsley. Throw everything together gently until it is evenly coated with dressing.

1 (14 oz) Black or Red beans drained and rinsed1 (14 oz) Sweet corn can be made drained and rinsed4 Medium Tomato (12 oz – 340g) I cut it off1 Medium Red Pepper (3 oz – 90g) I cut it off 1 Clove Garlic carved1 Little red onion I cut it off1 jalapeno pepper cut into seeds and dice1/2 cup Coriander, /parsely carved2 TBSP (30g) Olive oil3 TBSP (45g) Lime juice2 Small spoons (10g) Honey1 Small spoons (1g) Ground cumin1 Small spoons (5G)Freshly ground black pepper, tastes goodLime skin from lime

Instructions

In a large bowl, add olive oil, lime juice, honey, ground cumin, salt and freshly ground black pepper.

Mix together.

Add the beans and corn.

Add diced tomatoes, red chili peppers, garlic, red onions and jalapeno pepper.

Continue with lime skin and coriander or parsley.

Combine and throw. Serve immediately or cover for at least 30 minutes to blend the flavors and refrigerate.

Serve as tortilla chips or side dishes with fish or meat. enjoy!
