I love the Quick Noodle Stir Fried Plate and this Mie Goreng is packed with the flavors of soy sauce, kecup manis, oyster sauce and lashing of sweet chili sauce. A great challenge for a spicy quick Friday night dinner.

Stir-fried noodles, finely chicken, mushrooms, vegetables, red chili peppers, coriander, lime wedges, fried noodles with half boiling eggs added on a white plate, fine chicken, mushrooms, vegetables, mee goren. The fork is on the plate. There is a dish with half a boiled egg and an additional plate of Mie Goreng in the background.

This spicy Asian noodles recipe was inspired by my father, who spent part of his childhood in Singapore. His time over there gave him the real taste of spicy and sassy noodles/rice dishes.

You can be quite original with what you add to this dish. I chose some leftover chicken, mushrooms and some crispy onions. I also like to serve it with sliced, hard boiled eggs. That’s what my dad did, so I’m stuck with it! I’ve also listed more ingredient swaps in the post.

First, saute the shallots until lightly browned, remove from the wok and place on one side for later use as toppings. Fry the mushrooms in a pan, add garlic and white cabbage and fry together, then add cooked chicken and fresh yellow noodles. Cook for a few minutes, throw everything together with tongs, then add the bean plout and spring onions. Then add the kecucumber manis, soy sauce, oyster sauce, sweet chili sauce and white pepper and toss together again until heated. It serves Mie Goreng topped with hard egg wedges, fresh coriander (coriander), sliced chili peppers, chili flakes and slices of lime.

Pro tips

Do you want to raise your heat level?

When adding cabbage, you can add a few chopped or dried chili flakes, or add a spoonful of sambal olek or sriracha instead.

This dish comes in many variations depending on the region used and the additional ingredients. Mine is a basic Mee Goreng.

🍽️What to offer

A hard boiled (or a little jammy) egg hot sauce, such as sriracha. The sweet chili sauce is also amazing!

I was able to eat these fried noodles all day long!

? FAQ

Can I move on?

yes! You can make Mee Goreng (without decoration) and then chill, cover and refrigerate for up to a day.
Reheat in a wok, leave the oil over medium high heat and pipe until heated all over. If noodles are stuck, add a nice splash of water and loosen it.
Add fresh decorations.

Can I make it vegetarian?

Yes, either rule out chicken or replace the appropriate vegetarian alternatives, such as tofu.
Replace the oyster sauce with vegetarian oyster sauce (available at most large supermarkets).

Ingredient swap/add

I sometimes like to add fried chorizo, crispy bacon, or small garlic shrimp.
The rest of the cooked beef or pork also works well, not chicken.
