Filled with its charming pork, potatoes and roasted green chili, this stew is something you dream of when the weather starts to cool down every fall. And before other native New Mexicans fix me, I am well aware of the ridiculous thing that actually insisted on the best NM green chili stew. Technically, I love them all.
That said, this is the best green chili stew in my family and we love it more than everything else. It is made with tender pork and potato chunks, spicy hot green chili, and a flavorful soup where you can dip the tortilla and rub the bowl cleanly. This is for me.

Over the years I have made green chili stews with a variety of meats, including pork, ground beef, steak, chicken and more. However, this green chili stew is our favorite.
If you send it to me, it’s not that I’m willing to try your Green Chili Stew recipe! I don’t distinguish between green chili recipes. I love adding green chili to enchiladas, burritos, tacos, soups and scrambled eggs. If the dish contains green chili, my boy will jump straight into it.
Green Chili Pork Stew
There have been a lot of requests for the slow cooker version of this recipe, but I finally played it the other day. And I’m so happy to tell you it worked beautifully.
You don’t even need to brown the meat! Throw all the ingredients into the addict at once and cover with a lid. Simmer high for 6 hours. The potatoes are fork tender and the pork is tender enough to fall apart, ready to eat!
This is certainly my kind of recipe, and it’s easy to make it on a stove or in a junkie’s pot! This native New Mexico is happy to eat green chili with breakfast, lunch and dinner.
There are plenty of potato and pork flavours and hearty chunks, which is a simple winter meal that our whole family enjoys. This recipe has a flavor from everything from Chile than the actual heat.
All my boys started eating this green chili stew while they were barely eating a solid food. We are huge fans of starting a green chile addiction early in life around this.

Chile vs Chile
Is it Chile or Chile? Ultimately, it’s all delicious, so it really doesn’t matter. Depending on where you live and whether you are at this time, you can refer to the usually hot one using both words.
However, in New Mexico, chili peppers are usually used when referring to a variety of dishes such as steak chili or creamy chicken chili. Chili is also used when referring to dishes that contain a substantial amount of chili peppa in recipes.
Dishes made with green or red chili peppers are often named chili by recipe name. Foods like this green chili stew are full of green peppers, meat, potatoes or beans. This is a stew and not a traditional chili recipe, so to recognize the chili in the recipe, we call it a green chili stew.
Pork Green Chile Recipe
If you’re new to cooking in Chile, or in the heat of ley, we recommend starting with mild green chili. At some grocery stores, you may be lucky to find frozen chili in the frozen section of the grocery store.
If frozen is not available, you should be able to find canned green chili at various levels of heat at most grocery stores. If you can’t find green enchilada sauce in your shop, you can substitute salsa verde with green chili sauce.
A few years ago I tried making this with sweet potatoes and my family got hooked on it. My favorite version is a traditional stew still made with white potatoes, but it’s really great in both ways. But even if you make it, this soup is great.

Crockpot Green Chili Stew
A slow cooker or crockpot is an appliance I have multiple times. If you are an avid slow cooker user like me, you may understand multiple needs. So let’s talk about my favorite:
First, this 6-quart slow cooker with a lid on it. These crockpots are perfect for transporting food. Mine went everywhere from church potlucks to barbecues, games nights and Thanksgiving dinners. However, fair warning, these slow cookers work crazy hot. Lower ones are closer to boiling than boiling, and warmer environments actually boil. So when I say I’m expensive, trust me.
My daily slow cooker is this 8 quart crockpot. This is my go-to appliance for cooking large roasts and large batches of chili. Fun fact: Did you know that a 4-quart full cooker actually cooks more slowly than a half-quart cooker?
To cook a few pounds of chicken and shred it for enchiladas and other small recipes, this 3-quart version is perfect.
Thanksgiving has been a breeze ever since I learned how to hold all my side dishes using these medium-sized round slow cookers.
If you’re not a fan of the idea of holding multiple slow cookers in your home, these clock pockets are a game changer when it comes to preparing and holding multiple dishes at the same time. They slide into a standard 6-quart crockpot and split it into two sections that are perfect for serving different side dishes or warming up taco fillings for parties.

Green Chili Stew Recipe
To make stew for horse stew, mix pork, flour, pepper and garlic flour in a gallon-sized ziplock bag and shaking and coat well. Stir garlic and onions in a large pot or Dutch oven in a little oil and add the flour-covered pork.
Cook the pork until browned and add green chili, green chili sauce, stock and salt. Cover and simmer low for 45 minutes. Then add the potatoes and simmer for about 15 minutes until the potatoes are in fork tender.
Make stew with a slow figure even easier. Mix the pork, flour, pepper and garlic flour into a gallon-sized ziplock bag. Shake, thoroughly coat, and grind the pork to the addict. Add potatoes, chili, green chili sauce, stock and salt. Cover with a lid and cook high for 6 hours until the potatoes become a fork tender and are able to pull the pork apart.

New Mexican recipes
For new Mexican favorites you might want to try these green chili chicken enchiladas, carabacite and New Mexico poses. These recipes are classic. If you haven’t tried it yet, Carne en Su Jugo (also known as the meat of Juces) is another dinner my family really enjoys.

Mix the pork, flour, pepper and garlic flour into a gallon-sized ziplock bag. Shake and set aside for a thorough coating.
Heat the oil in a large pot over medium heat. Add the fresh garlic and onion and saute for about 2-3 minutes until translucent.
Add the dusty pork and cook until browned, about 5 minutes. Add chili, enchilada sauce, stock and salt and bring to a boil. Cover and simmer low for 45 minutes.
Add the potatoes, heat up and bring to a boil. Reduce until simmered and cook until potatoes are tender, about 15 minutes. enjoy!
Slow cooker direction: Combine all the ingredients of the addict and cover with a lid. Cook for 6 hours or high until potatoes and pork are tender. (This recipe doubles beautifully!)
