Served with this broccoli, ham and cheese casserole and rice, it’s everything you want for a cozy, satisfying dinner. It’s creamy, cheap, packed with flavor, and comes with simple ingredients you probably already have. Plus, it’s a great way to run out of remaining ham without feeling it over and over again.

Ingredient Notes + Variations
This casserole is a good notebook for every single one of the best proteins, vegetables, carbohydrates, cheeses and more. Here’s a quick breakdown of key players and how to confuse things whenever you want.
Ham – diced deriham or the rest of the holiday ham both work well here. Cream of chicken soup – classic binder. Can be exchanged for mushrooms and celery cream. Chicken Stock – Add flavor. Water works in a pinch. Onion, carrot, corn, broccoli – all vegetables in this casserole. Now, if you don’t have one big carrot or happen to have corn ears in your hand, don’t sweat it. Use what you have! The vegetables will be tasty.

Tips for success
Let it sit for 5 minutes before serving and set it up a bit. Lightly steam the broccoli and in the oven, avoid turning it into a mash. Use freshly shredded cheese to make it melt smoothly. Do not skip the foil when baking. This traps steam and helps the rice to cook.
