Taste the quality of the restaurant, but are you looking for a winter minestron that works on busy weekday nights? This butternut squash and kale soup version is heartfelt, flexible and ready to go.

Cold climate soup that will really satisfy you

Don’t settle for a watery “vegetable soup.” If you get Minest Lawn right this winter, people will forget a few seconds…and a shameless third. Packed with sweet butternut and hearty kale – a comfortable, comfortable meal in cold weather – a thriving base of tomatoes to taste the quality of the restaurant! My other favorite winter soup is butternut squash and sausage orzo soup and sausage white bean soup.

My winter minestrone doesn’t have a flooded noodle drama. Cook the pasta separately to maintain its elasticity and leavens do not turn into starchy stew. Finally, I finish the pot with a sprinkle of lemon, good old olive oil and Parmesan.

Tuscan-style winter minestron for a cozy dinner

I use fresh herbs (sage, rosemary, thyme) and pinch of chili flakes. Your kitchen smells like a small Tuscan tratoria (no more airfare). The soup is very flexible: you can swap butter beans for cannellini or northern beans, and kale for spinach.

The butter beans become creamy without cream, and the whole thing comes together in about 40 minutes and are firmly placed in the territory of a weekday dinner. Conclusion: It cannot eat at a stop – the kind of soup you will stuff for lunch and willing to eat again for dinner. Serve with garlic bread, delicious cheddar, bacon scones, or garlic butter dinner rolls.

Ingredients and alternatives

Pasta Choice: I used radiatol pasta, but other small shapes like ditarini, elbows, or small shells go well together. Squash Swap: Butternut squash is naturally sweet and sturdy, but you can also use pumpkin and delicate squash. If you use Delicata, you don’t need to peel it. Kale Options: Lacinato Kale quickly tender and has a mild flavor, but Curly Kale is often inexpensive and works beautifully with this recipe. Beans: I love using butter beans when adding creaminess in Minest Lawn Soup this winter, but Cannellini and Great Northern Beans make great alternatives. Tomatoes: I made a slightly thicker soup using a 28-ounce can of crushed tomatoes. Alternatively, you can use tomato puree to make the soup smoother and thicker. Herbs: I love using fresh herbs like sage, rosemary, and thyme. If you use dried herbs, reduce the amount by a third. Alternatively, replace all fresh herbs with 1½ Italian seasonings if necessary. Vegetarian Options: Soup Replace chicken broth with vegetable broth to maintain vegetarian.

What is Minest Lawn?

Authentic Minestrone is a regional Italian vegetable soup made on seasonal produce, beans, small pasta and rice, often starting with sofrito and sometimes with a Parmesan rind. The soup is usually a vegetable. The exact ingredients vary depending on the season and location.

My version honors its spirit with winter vegetables (butternut, kale), beans, small pasta and classic herbs. I skip the onion/carrot to shorten the preparation, use tomato forward soup, and (optionally) use the chicken for the extra body. The pasta is cooked separately and finished with lemon, making it fun and ready for meals on weekdays.

Cooking Tips

Cook the pasta separately: I like to cook the pasta alone (apart from the soup) to avoid absorbing too much soup. Add it to the pot only when it’s ready. Temporarily brown the squash before simmering to add a nutty roast flavor. Stir in medium heat while frying the celery and butternut. This allows the vegetables to be toasted lightly without turning them brown, which can make the celery tougher. Do not bring to a boil: Instead of slowly boiling the soup, simmer in a gentle stew so that the vegetables are evenly tender without falling apart. Streamline preparation time: With a little practice, you can prepare this recipe in just 30 minutes. Start by boiling the pasta water while setting up the ingredients. Prepare celery, butternut and kale while the water is heated. Cook the pasta while stirring the vegetables, drain and rinse the beans while the soup is simmering.

This winter minestrone is a thriving Italian vegetable soup of hearty tomatoes, finished with squeezes of herbs and lemons, stuffed with sweet butternut squash, soft kale, creamy butter beans and short pasta. A truly comfortable food perfect for a cozy weekday dinner, meal preparation or casual entertainment, the restaurant’s quality flavour is enjoyed in about 40 minutes.

Instructions

Bring a large pot of boiling salted water to a boil. Cook the pasta until al dente according to the package instructions. Drain and set aside.
Heat the olive oil in a large pot over medium heat. Add the celery and cook until tender, 3-4 minutes. Add the garlic and tomato paste and cook until it smells, about 1 minute.
Stir in butternut squash and season with 1/4 tsp salt and 1/4 tsp pepper. Cook for 4-6 minutes until lightly browned.
Add chicken soup, crushed tomatoes, 2 cups of water, sage, rosemary, thyme, and red chili pepper flakes if used. Simmer until squash is tender, and cook for 5-7 minutes.
Add the kale and butter beans. Cook for 1-2 minutes until kale is tender. Savour and season with remaining salt and pepper.
Stir in the cooked pasta and cook for 1-2 minutes.
Warm up the wedges of Parmesan, fresh herbs and lemon, if necessary.

Note

The best way to serve: Minest Lawn Soup in winter is large enough to become a main course. Hot crusty bread, focaccia or garlic toast for soaking. Flavorous Decorations: When serving, sprinkle the soup with finely grated Parmesan, drizzle with olive oil, and squeeze fresh lemon into the soup. Raise the soup up with fresh parsley or dill to add freshness just before serving. Remaining Storage: Store the soup and pasta separately in airtight containers in the fridge for up to 4 days. By tearing them apart, the pasta prevents too much of the soup. Add cooked pasta to the soup just before reheating. Freezer-friendly: Freeze soup without pasta for best results. Reheat and add freshly cooked pasta before serving. Meal preparation tips: Pre-chop vegetables and herbs and store them individually in the fridge for up to 2 days. Cooked beans can also be split and frozen. To prepare meals, cook the pasta and soup and store them individually, then mix them into the soup when they are cooked and ready to eat.
