The craving for blackened fish was what prompted me to first create this recipe for Cajun seasonings. The result was the most delicious blackened mahi mahi we’ve ever had.
Since then I have discovered how versatile this spice blend is. And it basically became my go-to versatile condiment. This scaled recipe creates 10 tablespoons (just over 1/2 cup) and when you peek into the pantry you will always find a jar on the shelf.

Ingredient Notes

Cajun seasoning mix is a simple blend of dried spices that create an attractive flavour when combined. Here are some notes on the ingredients I think are worth pointing out:
Granule Garlic: If you’re not used to granulated garlic, we highly recommend picking up some. Costco sells large containers for great value. It has a coarser texture than garlic powder and is perfect for friction and seasoning blends. Granulated garlic adds a great garlic flavour, but does not burn with high heat like fresh garlic. Perfect for roasting vegetables and meat. Also, there are no lumps, so it mixes more smoothly with the liquid. I use it frequently, so I rarely buy garlic flour anymore. Sea Salt: I use finely ground sea salt in all my seasoning blends. The table salt works well, but the sea salt has a beautiful flavour that really shines here. It is now widely available in most grocery stores, allowing you to replace the same amount of table salt if necessary. Smoked Paprika: This is where smoky depth comes from and makes a huge difference. Skip the usual “sweet” paprika or Hungarian varieties. I want the rich, smoky flavor that only paprika can bring. It is one of my favorite spices and an easy way to add bold flavour to a variety of recipes. Cayenne Pepper: This is a heat maker of Cajun seasonings. Adjust it up or down depending on how spicy things are. I’ll keep mine moderate, but if you want it to burn, add a little more. Dried oregano and Thyme: These herbs are part of the classic Cajun flavor profile, adding a rustic and flavorful balance to your bold spices.
How to make Cajun seasoning mix
It won’t be easier than this! Measure the spices, place them in a small bowl or jar, and stir and shake until everything is well mixed. Cajun seasonings can be used within less than five minutes.

Storage Tips
Store your homemade Cajun seasoning blends in airtight containers like small mason jars and in a cool, dry place away from heat and light. For the best flavor, use within about 6 months, but dried spices can be left fresh for up to a year or more. Always give the jar a good shaking before using each to redistribute the spices.
