Cauliflower sushi rice is a great way to add fiber while reducing the amount of calories per serving. Simply toss steamed cauliflower rice with cooked sushi rice (or use short-grain or long-grain white rice, basmati rice, or sticky rice) and seasoned rice vinegar. Yields approximately 6 (3/4 cup) or 9 (1/2 cup) servings.

If you love rice but are looking for a way to add fiber and bulk without adding calories, try adding steamed cauliflower rice. I learned this trick on TikTok years ago and have been making rice this way ever since. Of course, you can take shortcuts like tossing steamed cauliflower with microwaveable rice, but if you have the time, we recommend making the rice in a rice cooker.

How does it taste?

Maybe I’m used to it, but I don’t really feel the flavor of cauliflower. In fact, I make this for my family and no one has ever complained. I also usually serve this in a bowl with lots of toppings, and it also helps to serve it with some kind of sauce to mask the cauliflower flavor.

What you need to make this cauliflower shushi rice:

Use sushi rice – or short-grain or long-grain white rice, basmati rice, or sticky rice with kosher salt – to enhance the flavor of this dish. Cauliflower Rice – I use frozen cauliflower rice so I always have it on hand. Flavored Rice Vinegar – Adds sweetness and sourness.

Measure 10 ounces of sticky rice or use long grain white rice, jasmine rice, basmati rice, or sticky rice.

Transfer the rice to a large mesh colander and rinse under cold water until the water runs clear.

Transfer the washed rice to the rice cooker pot and add 1/2 teaspoon kosher salt.

Add water to the “white rice” or “2 cups” water line, or according to the instructions that came with your rice cooker.

Close the lid, plug it in, and press the white rice button. It’s really easy. I’ve linked the rice cooker that I love and use to the printable recipe at the end of this article.

Once cooked, transfer the sushi rice to a large bowl. Steam the cauliflower rice according to package directions and add to the bowl with the rice.

Another way to cook cauliflower rice:

Transfer to a microwave-safe dish, cover with vent, and microwave for 4 to 6 minutes. Add it to a frying pan with a little oil and cook over medium-high heat, stirring occasionally and covering until cooked through. Then open the lid and stir to evaporate excess water.

Pour in 1/4 cup of seasoned rice vinegar.
