We love vegetables in the garden and always have extra squash! We make this delicious side dish every year, stuffed with cheese, bacon and topped with Cheez-it. It is also very versatile. You can easily make this casserole to your family’s preferences! Just switch that up every time I make it during the summer.

I like to make this with white cheddar cheese it but I can use whatever I want. The Ritz crackers also work. To make it a little healthier, you can use turkey bacon or the cheese your family likes.
Can you cut this recipe in half?
I think you can do it easily and it won’t put much effort into it. Most of the ingredients in this recipe are simple. The great thing about this type of recipe is that it doesn’t have to be “accurate.”

Tip
I want to do squash so cooking times may vary depending on this recipe. Starting with a more ripe squash, it may cook faster.

Cheap bacon yellow squash casserole
This squash casserole will soon become a summer staple. We stacked cheese and bacon and topped with cheese it!
Squash and set aside. Cook, drain and save drip
In a bowl, whisk together the olive oil, black pepper, salt, basil, parsley, garlic, sugar, bacon drops, and chopped onion. Pour into squash and toss and cover all squash.
Spread a layer of squash on a 2-3 quart baking dish and sprinkle over half of the cheese cracker crumbs, half of the crushed bacon and half of the shredded cheese.
